Instructions:

  1. Preheat Oven: Preheat your oven to 375°F (190°C).

  2. Prepare Dry Ingredients: In a bowl, mix together the cocoa powder and flour, then set aside.

  3. Prepare Batter: In a separate bowl, use an electric beater to whisk together the egg yolks, whole egg, sugar, and water for 8-10 minutes, until creamy.

  4. Add Dry Ingredients: Blend the Graham crackers and powdered almonds into the egg mixture.

  5. Whip Egg Whites: In another bowl, beat the egg whites until stiff peaks form. Gradually add icing sugar and continue beating for 30 seconds.

  6. Combine Mixtures: Gently fold the beaten egg whites into the egg yolk mixture. Then, fold in the cocoa and flour mixture until well combined.

  7. Bake: Pour the batter into a buttered and floured 10-inch round cake pan. Bake in the center of the oven for 30-40 minutes, or until a toothpick inserted into the center comes out clean.

  8. Cool: Remove the cake from the oven and let it cool for 5 minutes before transferring to a wire rack to cool completely.
