Andes Brownie-Mint Pie 🥧

Instructions:

  1. Prepare Brownies: Whether using homemade or boxed brownie mix, prepare according to package instructions. Allow brownies to cool on a wire rack, but do not remove the sides of the pan yet.

  2. Prepare Mint Mousse: In a microwave-safe bowl, melt 1 cup of chopped mints in the microwave. Meanwhile, in a double boiler over boiling water, whisk the egg yolks until they become pale and frothy. Slowly whisk in the melted mints, being careful not to use your fingers to scrape the cup. The mixture will stiffen.

  3. Whip Egg Whites: Quickly whip the egg whites to semi-stiff peaks, then slowly fold them into the mint mixture. Next, whip the heavy cream until thick and fold it into the mint and egg mixture. Set aside 1/4 of the mint mousse for later use.

  4. Assemble Pie: Spread the remaining 3/4 of the mint mousse over the cooled brownie, carefully leveling it smooth. Chill the pie for one hour.

  5. Prepare Chocolate Sauce: After chilling, melt 1 cup of semi-sweet chocolate chips with 1/4 cup of half-and-half. Whisk until smooth, then pour the chocolate sauce over the mint mousse layer. Allow the chocolate to cool.
