Step 1: Prepare the Apricots

To begin, select ripe but firm apricots. They should be sweet yet not overly soft. Gently wash the apricots under cold water to clean them. Set aside 5 whole apricots for decoration. Slice the remaining apricots in half, remove the pit, and chop them into small cubes about 1.5 cm each. Set them aside for later use in the batter.

Step 2: Make the Cake Batter

Start by preparing the cake batter. In the bowl of a stand mixer, add the softened butter and sugar. Beat them together until the mixture is light and fluffy. Next, incorporate the Greek yogurt gradually, mixing it in until well combined. Add the whole eggs and the additional egg yolk, one at a time, ensuring each is fully mixed before adding the next.
