My friend Tina graciously shared this beloved family recipe, and it has become a staple at my gatherings. These delightful mini cheesecakes are always the highlight of the dessert table, disappearing within minutes. With a creamy texture and a burst of cherry goodness, they are perfect for any occasion, especially during the festive season.

Ingredients:

  • 18-24 foil baking cup papers
  • 18-24 chocolate cookies
  • 2 packages (16 ounces total) cream cheese, softened
  • 1 1/4 cups granulated sugar
  • 2 tablespoons all-purpose flour
  • 3 large eggs
  • 1 cup sour cream
  • 1 teaspoon almond extract
  • For the topping:
    • 1 cup sour cream
    • 1/3 cup granulated sugar
    • 1 teaspoon vanilla extract
  • Cherry pie filling, for garnish

Instructions:

Step Description
1 Preheat the oven to 325Β°F (165Β°C).
2 Line 18 regular size muffin tins with foil baking cup papers to prevent sogginess.
3 Place one chocolate cookie at the bottom of each baking cup as the crust.
4 In a large bowl, beat the cream cheese until smooth and creamy.
5 Add granulated sugar, flour, and blend until well combined.
6 Beat in the eggs, one at a time, ensuring thorough mixing.
7 Stir in the sour cream and almond extract until the mixture is smooth.
8 Fill each prepared tin almost to the top with the cream cheese mixture, leaving room for rising and for the topping later.
9 Bake for 20-25 minutes, or until the cheesecakes are set.
10 Remove from the oven and allow them to cool for 10 minutes.
11 While the cheesecakes are cooling, prepare the topping by mixing sour cream, sugar, and vanilla extract in a bowl.
12 Spread a heaping teaspoonful of the topping onto each warm cheesecake.
13 Let the cheesecakes cool in the pans for about 30 minutes, then refrigerate them until well chilled.
14 Just before serving, garnish each cheesecake with a dollop of cherry pie filling. Avoid adding the topping too early to prevent sogginess.
15 Any leftover cherry pie filling can be stored for future use.
16 Keep the leftover cheesecakes chilled until ready to serve.
