Prepare the Cherry Filling
Begin by preparing the cherry filling. Rinse the cherries under cold running water, then dry them gently using a clean towel. Pit the cherries using a cherry pitter. Place the pitted cherries into a mixing bowl and add the sugar. -
Add Lemon Zest
Grate the zest of 1 lemon, being careful to only get the yellow part of the peel, avoiding the white pith that can be bitter. Stir the zest into the cherries to combine. -
Make the Crumble Topping
In a separate, large mixing bowl, combine the all-purpose flour, ground cinnamon, and the seeds scraped from the vanilla bean pod. Using your fingertips, quickly rub the mixture together to form a crumbly, slightly granular texture. The butter should be incorporated, but not fully absorbed, resulting in a crumbly mixture. -
Assemble the Crumbles
Take 4 small oven-safe ramekins (about 8 cm in diameter and 5 cm in height) and spoon a few tablespoons of the cherry mixture into each one. Spread the mixture evenly, making sure it covers the bottom of the ramekins. -
Top with Crumble
Generously cover each ramekin with the crumble mixture until the top is fully covered and slightly mounded. -
Bake
Place the ramekins on a baking tray and transfer to a preheated oven at 180°C (350°F) for about 30 minutes. Bake until the crumble topping turns golden brown and crispy, while the cherries are bubbling beneath the surface. -
Serve
Once baked, remove from the oven and let cool slightly. Serve the cherry crumble warm, directly in the ramekins, for a comforting and delicious dessert.
