Instructions

  1. Prepare the Cherry Filling
    Begin by preparing the cherry filling. Rinse the cherries under cold running water, then dry them gently using a clean towel. Pit the cherries using a cherry pitter. Place the pitted cherries into a mixing bowl and add the sugar.

  2. Add Lemon Zest
    Grate the zest of 1 lemon, being careful to only get the yellow part of the peel, avoiding the white pith that can be bitter. Stir the zest into the cherries to combine.

  3. Make the Crumble Topping
    In a separate, large mixing bowl, combine the all-purpose flour, ground cinnamon, and the seeds scraped from the vanilla bean pod. Using your fingertips, quickly rub the mixture together to form a crumbly, slightly granular texture. The butter should be incorporated, but not fully absorbed, resulting in a crumbly mixture.

  4. Assemble the Crumbles
    Take 4 small oven-safe ramekins (about 8 cm in diameter and 5 cm in height) and spoon a few tablespoons of the cherry mixture into each one. Spread the mixture evenly, making sure it covers the bottom of the ramekins.

  5. Top with Crumble
    Generously cover each ramekin with the crumble mixture until the top is fully covered and slightly mounded.

  6. Bake
    Place the ramekins on a baking tray and transfer to a preheated oven at 180°C (350°F) for about 30 minutes. Bake until the crumble topping turns golden brown and crispy, while the cherries are bubbling beneath the surface.

  7. Serve
    Once baked, remove from the oven and let cool slightly. Serve the cherry crumble warm, directly in the ramekins, for a comforting and delicious dessert.
