  1. Prepare the Chocolate Tempering (Insemination Method):
    Begin by finely chopping the dark chocolate to ensure even melting. For the tempering process, place the chocolate in a heatproof bowl over a double boiler or in a saucepan over low heat. Stir constantly, allowing the chocolate to melt completely. During this phase, it’s crucial to monitor the temperature carefully and ensure it reaches 54°C (130°F).

    Alternatively, you can melt the chocolate using a microwave, heating it in short bursts of 15-20 seconds, stirring in between, to prevent burning. Once melted, check the temperature, which should reach the same 54°C (130°F).

  2. Cool the Chocolate:
    Once the chocolate has melted and reached the correct temperature, remove it from the heat source. Add the remaining chopped chocolate and stir until it melts completely. Continue stirring until the chocolate cools to around 32°C (90°F). This process helps in tempering the chocolate, giving it the perfect consistency for molding.

  3. Prepare the Molds:
    Once the chocolate has cooled to the right temperature, transfer it into a clean bowl. Now, take your individual aluminum molds and dip the base into the tempered chocolate. Ensure that the chocolate covers about half of the mold. Gently lift it out and tap it lightly to remove any excess chocolate.

  4. Form the Baskets:
    Flip the molds over onto a flat surface or tray to let the chocolate set. Repeat this dipping process for all the molds. Wait for about 10 minutes, allowing the chocolate to firm up slightly. When the baskets feel less sticky to the touch, dip them into the chocolate again, ensuring a thicker coating. This second layer will help form sturdier baskets.

  5. Let the Chocolate Set:
    Allow the chocolate to completely harden, which will take approximately 30 minutes. The baskets should feel firm to the touch once they have fully set.

  6. Release the Molds:
    To remove the chocolate baskets from their molds, gently pinch the sides of the aluminum mold inward. This will make it easier to release the chocolate cups without breaking them. Repeat the process for all the molds.
