This decadent treat is perfect for any occasion, whether you’re entertaining guests or simply satisfying your sweet tooth cravings. 🍫

Preparation Time: 30 minutes
Cooking Time: 25 minutes
Total Time: 55 minutes

Ingredients:

  • 6 ounces of bittersweet chocolate 🍫
  • 12 tablespoons of unsalted butter 🧈
  • 3/4 cup of sugar 🥄
  • 1 pinch of fine sea salt 🧂
  • 3 large eggs, separated 🥚🥚🥚
  • 1 teaspoon of vanilla extract 🌿
  • 1/8 teaspoon of cream of tartar 🥄
  • Coffee ice cream (for serving) 🍦
  • Vanilla ice cream (for serving) 🍨

Instructions:

  1. Preheat your oven to 375°F (190°C), and position a rack in the lower third of the oven.

  2. Melt the chocolate and butter together with 6 tablespoons of sugar and the pinch of salt. You can do this by placing them in a medium stainless-steel bowl set in a skillet of hot water, ensuring it’s not simmering, and stirring frequently until melted and smooth.

  3. Remove the bowl from the heat and allow it to cool slightly.

  4. Whisk in the egg yolks and vanilla extract until well combined.

  5. In a separate medium bowl, combine the egg whites and cream of tartar.

  6. Using a hand-held electric mixer on high speed, beat the egg whites until soft peaks form.

  7. Gradually add the remaining 6 tablespoons of sugar to the egg whites, beating constantly, until they form stiff and glossy peaks.

  8. Fold 1/4 of the beaten egg whites into the chocolate mixture to lighten it.

  9. Gently fold the chocolate mixture into the remaining egg whites until just combined, being careful not to deflate the mixture.

  10. Divide the batter evenly among 6 oven-proof serving dishes, each with a capacity of 12 to 16 ounces. The batter won’t completely fill the dishes but leave enough room for toppings.

  11. Place the serving dishes on a large baking sheet for easy handling.

  12. Bake in the preheated oven for 20 to 25 minutes, or until the budini are puffed with crusty, deeply cracked tops, and a toothpick inserted in the centers comes out quite gooey.

  13. Optional: If preparing ahead, you can refrigerate the budini at this stage for up to 2 days, loosely covered.

  14. To reheat the budini, if necessary, simply bake in a hot, 375°F oven for about 10 minutes until puffed and warmed through.

  15. Serve the budini within 10 minutes of baking, as they will sink slightly as they cool.

  16. Top each serving with a generous scoop of coffee ice cream and vanilla ice cream for a decadent finishing touch.

This indulgent dessert is a harmonious blend of rich chocolate and buttery goodness, elevated by the creamy texture of the ice cream. It’s a true crowd-pleaser that’s both elegant and comforting, perfect for any occasion, whether it’s a cozy family dinner or a festive gathering with friends. So why wait? Treat yourself to the heavenly delight of Jennifer Millar’s Chocolate Budini today! 🍨🍫
