Instructions

Step 1: Prepare the Filling
  1. In a large mixing bowl, combine the grated Britannia Cheese, desiccated coconut, chocolate chips, and red chilli powder.
  2. Mix well to ensure the ingredients are evenly distributed. Set the filling aside.

Step 2: Make the Dough for Gujiya Pastry
  1. In a large bowl, combine the all-purpose flour, ghee, and a pinch of salt.
  2. Use your fingers to mix until the mixture has a crumbly texture, similar to coarse breadcrumbs.
  3. To test if the texture is correct, press the flour together with your fingers. If it holds shape but crumbles when let go, it’s ready.
  4. Gradually add water, a little at a time, and knead into a smooth, firm dough. Knead for 3–4 minutes to achieve the perfect texture.
  5. Cover the dough with a damp cloth and let it rest for 10 minutes.

Step 3: Assemble the Gujiyas
  1. Divide the dough into small equal portions and roll each into a ball.
  2. Dust the balls lightly with flour and roll them into small circles about 3 inches in diameter.
  3. Place the rolled dough onto a gujiya mold, if available. Alternatively, shape by hand.
  4. Spoon a generous amount of the chocolate cheese filling into the center of each circle.
  5. Fold the dough into a half-moon shape, sealing the edges firmly by pressing them together. You can crimp the edges with a fork or your fingers for a decorative touch.
