Ingredients:

1 cup Chocolate, grated

Instructions:

  1. Preheat oven to 350ยฐF.

  2. Prepare Cake Pans: Butter three 8-inch diameter cake pans. Line the bottom of each with wax paper, and butter the paper.

  3. Beat Eggs and Sugar: In a large bowl, combine the eggs with the sugar and vanilla extract. Beat with a hand-held electric mixer until pale and very thick, about 5-7 minutes.

  4. Add Dry Ingredients: Sift the flour and cocoa powder over the egg mixture. Fold in lightly and evenly with a spatula.

  5. Incorporate Butter: Gently stir in the melted butter until well combined.

  6. Divide Batter: Divide the mixture among the prepared cake pans, smoothing them level.

  7. Bake: Bake for 15-18 minutes, until the cakes have risen and are springy to the touch.

  8. Cool Cakes: Leave the cakes to cool in the pans on a rack for about 5 minutes, then turn out and leave to cool completely. Remove the lining paper from each cake layer.
