Ingredients:

  • 125g unsalted butter
  • 100g dark chocolate
  • 300g caster sugar
  • 150g self-raising flour
  • 1 pinch of salt
  • 2 large eggs
  • 150g cherry jam
  • 100g dark chocolate (for icing)
  • 100ml double cream
  • 12 cherries (for garnish)

Instructions:

Step Description
1. Preheat the oven to 180°C/gas mark 4.
2. In a heavy-bottomed pan, melt the butter over low heat.
3. Once the butter is nearly melted, add the dark chocolate.
4. Allow the chocolate to begin softening, then remove the pan from the heat. Stir with a wooden spoon until the butter and chocolate are smooth and fully melted.
5. Incorporate the cherry jam, caster sugar, salt, and eggs into the mixture.
6. Stir with a wooden spoon until all ingredients are well combined, then gradually add the self-raising flour.
7. Scrape the batter into muffin papers arranged in a muffin tin.
8. Bake in the preheated oven for 25 minutes, or until a toothpick inserted into the center comes out clean.
9. Allow the cupcakes to cool in the pan for 10 minutes before transferring them to a wire rack to cool completely.
10. For the icing, break the dark chocolate into small pieces and add them to the double cream in a saucepan.
11. Bring the mixture to a boil, then remove from heat. Whisk the mixture either by hand or with an electric mixer until it becomes thick and smooth.
12. Ice the cooled cupcakes with a spoon, then top each cupcake with a cherry in the center for garnish.
