Ingredients:

1/2 cup Dark corn syrup
1/4 cup Instant espresso
2 tbsp Instant coffee powder
2 tbsp Powdered sugar
3/4 cup Powdered sugar
1 Package cream cheese
1 1/2 cups Heavy cream
12 Chocolate chip cookies

Instructions:

  1. Prepare Coffee Syrup:

    • In a small bowl, combine coffee liqueur, water, dark corn syrup, instant espresso, and 2 tablespoons of powdered sugar. Mix until well blended.
  2. Prepare Cream Cheese Mixture:

    • In a large bowl, combine 5 tablespoons of the prepared coffee syrup, 1/2 cup of powdered sugar, and cream cheese.
    • Use an electric mixer to beat the mixture until smooth and fluffy.
  3. Whip the Cream:

    • In another large bowl, beat the chilled heavy cream and the remaining 1/4 cup of powdered sugar until stiff peaks form.
  4. Combine Cream Cheese and Whipped Cream:

    • Gently fold the whipped cream into the cream cheese mixture until fully incorporated.
  5. Assemble the Parfaits:

    • Break up 1 chocolate chip cookie into the bottom of each of the 6 parfait glasses or wine goblets.
    • Drizzle 1 tablespoon of the coffee syrup over the crumbled cookie in each glass.
    • Spread approximately 1/3 cup of the cream cheese filling over the coffee-soaked cookies in each glass.
    • Repeat the layers of cookies, coffee syrup, and cream cheese filling until the glasses are filled, finishing with a layer of cream cheese filling on top.
  6. Final Touch:

    • Dust the tops of the parfaits with sifted cocoa powder for a finishing touch.
  7. Chill:

    • Cover the assembled parfaits and refrigerate them for at least 6 hours or overnight to allow the flavors to meld and the desserts to set.
