Ingredients:

  • 1 cup butter
  • 2 1/4 cups margarine
  • 2 cups brown sugar
  • 1 cup light corn syrup
  • 1 teaspoon vanilla extract
  • 1 cup melted chocolate (cooled)

Instructions:

Step Description
1 Line a 9x9x2-inch baking pan with foil, extending the foil over the edges of the pan for easy lifting.
2 Butter the foil and set it aside.
3 In a heavy 3-quart saucepan, melt the butter over low heat.
4 Add brown sugar, cream, and corn syrup. Mix well.
5 Cook over medium-high heat until boiling, stirring constantly with a wooden spoon to dissolve sugar (about 7 minutes). Avoid splashing the sides of the pan.
6 Clip a candy thermometer to the pan.
7 Cook over medium heat, stirring frequently, until the thermometer registers 248°F (this should take about 45 to 55 minutes). The mixture should boil at a moderate, steady rate over the entire surface.
8 Remove the saucepan from heat and remove the thermometer.
9 Immediately stir in vanilla.
10 Quickly pour just a little more than half of the mixture into the prepared pan.
11 Stir the melted and cooled chocolate into the remaining caramel mixture in the saucepan.
12 Pour the chocolate mixture over the caramel mixture in the baking pan.
13 Gently zigzag a narrow spatula through the mixtures to create a marbled effect.
14 When the caramel is firm, use the foil to lift it out of the pan.
15 Use a buttered knife to cut the candy into 1-inch squares.
16 Wrap each piece in clear plastic wrap.
