Instructions
Prepare the Chocolate Mousse:
- Begin by finely chopping the dark chocolate into small pieces.
- While the gelatin is softening in water, pour the fresh cream into a saucepan and add the sugar. Heat the mixture until the sugar dissolves completely.
- Once the sugar is dissolved, remove the saucepan from the heat. Squeeze out the excess water from the gelatin sheets and add them to the hot cream mixture, stirring to dissolve.
- Strain the mixture through a fine mesh sieve to ensure it’s smooth and free of any lumps.
- Transfer the mousse mixture into a siphon canister and securely close it. Charge the siphon with nitrogen and shake it well about ten times.
- Place the siphon in the fridge to chill for a minimum of 3 hours and up to 12 hours for the mousse to set perfectly.
Prepare the Orange Biscuits:
- In a large mixing bowl, combine the room-temperature butter and sugar.
- Wash an untreated orange thoroughly and grate its zest. Add the orange zest to the butter and sugar mixture.
- Gradually add the sifted all-purpose flour to the mixture and stir to combine, forming a soft dough.
- Transfer the dough onto a lightly floured surface and knead it until it becomes compact and smooth. Shape it into a flat disc.
- Wrap the dough in plastic wrap and refrigerate for 30 minutes to firm up.
- After resting, roll out the dough and shape it into logs using your hands. Cut the logs into pieces about 7mm in diameter and 8-9cm long.
- Arrange the shaped biscuit dough on a baking sheet lined with parchment paper and bake them in a preheated oven until lightly golden.
To Serve:
Once the mousse has set, serve it in individual cups, garnished with a side of homemade orange biscuits for a delightful contrast of flavors. Enjoy this decadent dessert chilled for the perfect indulgence.
