Instructions:

Begin by zesting the two oranges to get about 150g of zest. If needed, you can dilute the orange juice slightly with a bit of water. Dice the candied orange into small cubes.

Melt the butter and allow it to cool slightly. In the meantime, pour the condensed milk into a large mixing bowl. Add the warm, melted butter and the grated orange zest. Whisk everything together using a hand whisk.

In a separate bowl, sift together the all-purpose flour, cocoa powder, and baking powder. Mix them lightly with a spoon. Gradually incorporate the sifted dry ingredients into the wet mixture, stirring continuously with the whisk. The batter will become thick and smooth.

Now, fold in the diced candied orange cubes.

Line a 20cm round cake pan with parchment paper, then pour the batter into the pan. Smooth out the top with a spatula to ensure an even surface.

Place the pan in the preheated oven at 165ยฐC (fan-off mode) on the lowest rack. Bake the cake for about 70 minutes. To test doneness, insert a toothpick into the centerโif it comes out clean, the cake is ready.

Once baked, remove the cake from the oven and carefully flip it while it’s still warm onto a cooling rack.

Once the cake has completely cooled, it’s time to prepare the glaze. Pour the condensed milk into a bowl and slowly add the sifted cocoa powder. Stir with a spatula until you achieve a smooth, glossy consistency. Drizzle the glaze over the top of the cake, allowing it to flow over the edges.

To decorate, use a fine grater to zest two more oranges. Using tongs, arrange the orange zest around the border of the cake. Finally, garnish with sprigs of rosemary and fresh red currants for a festive touch.
