Instructions

To start, chop the dark chocolate using a sharp knife. Once chopped, melt the chocolate over a double boiler. To do this, place the chocolate in a heatproof bowl, then set the bowl over a pot of simmering water. The water should not touch the bowl; it should only generate steam to gently melt the chocolate.

Meanwhile, in another pot, combine the fresh cream and condensed milk. Gently heat the mixture, stirring occasionally.

Once the chocolate is melted, stir it frequently to ensure it melts completely and evenly.

Add the sifted icing sugar to the cream and condensed milk mixture. Stir well, allowing the sugar to dissolve completely.

Incorporate the melted chocolate into the cream mixture and stir until fully combined.

Soak the gelatin sheets in a small bowl of cold water for a few minutes until softened. Once softened, dissolve the gelatin by stirring it into the warm chocolate mixture until completely dissolved.

Carefully pour the mixture into egg-shaped molds, filling each half. Allow them to set in the fridge for at least 3 hours or until firm.

Once the panna cotta has set, whip the remaining 150g of cream in a high-sided bowl until it reaches soft peaks. Gradually add the remaining icing sugar (30g) and continue whipping until stiff peaks form.

To remove the panna cotta from the molds, briefly dip the mold into hot water for a few seconds. Gently remove the panna cotta from the mold and place it on a plate for serving.

Using a piping bag, pipe the whipped cream on top of the panna cotta for decoration.
