Pie Au Rhum Recipe

Ingredients:
- 1 1/2 tsp sugar
- 1 cup water
- 1/4 cup sugar
- 8 eggs, separated
- 2/3 cup sugar
- 1 1/2 tsp vanilla extract
- 1 cup dark rum
- 1/4 tsp salt
Instructions:
1. Prepare the Pie Pan:
- Begin by sprinkling 1 1/2 teaspoons of sugar evenly over the bottom and sides of a well-buttered 9-inch pie pan.
2. Melt Chocolate:
- In a saucepan, melt the chocolate in water over very low heat, stirring constantly until smooth. Once melted, remove it from the heat and set aside.
3. Beat Egg Yolks:
- In a mixing bowl, beat the egg yolks until they are thick and light in color. Gradually add 2/3 cup of sugar while continuing to beat.
4. Combine Ingredients:
- Blend the melted chocolate, vanilla extract, and dark rum into the beaten egg yolks until well combined.
5. Beat Egg Whites:
- In a separate bowl, beat the egg whites and salt until soft peaks form.
6. Fold Egg Whites:
- Carefully fold the beaten egg whites into the chocolate mixture, ensuring thorough blending.
7. Bake:
- Pour the mixture into the prepared pie pan and bake at 350°F (175°C) for 25 to 30 minutes, or until the pie is puffed and firm.
8. Cool and Chill:
- Allow the pie to cool for 15 minutes, then chill it in the refrigerator for 1 hour. During this time, the center will naturally fall, forming a shell.
9. Fill the Shell:
- While the pie is chilling, also chill the remaining chocolate mixture for about 1 1/2 hours. Once chilled, spoon the chocolate mixture into the prepared shell.
10. Chill Again:
- Return the pie to the refrigerator and chill it again for at least 3 hours to set.
11. Garnish and Serve:
- Before serving, garnish the pie with whipped cream and chocolate-dipped fruit, if desired.
