Ingredients:

Instructions:

Preheat and Prepare:
- Preheat your oven to 350°F (175°C).
- Grease a 9-inch springform pan.

Prepare Crust:
- In a small bowl, combine chocolate cookie crumbs and 1 1/2 cups sugar.
- Stir in melted butter until well mixed.
- Press the mixture onto the bottom and 1 1/2 inches up the sides of the prepared springform pan.
- Bake the crust in the preheated oven for 10 minutes, then cool it on a wire rack.

Prepare Chocolate Mixture:
- Reduce the oven heat to 325°F (165°C).
- In a saucepan over low heat, melt the semisweet chocolate chips, stirring until smooth.
- Remove the chocolate from the heat and stir in 1/4 cup each of margarine and heavy whipping cream until well combined. Set aside.

Prepare Cheesecake Filling:
- In a mixing bowl, beat the cream cheese and 1 cup sugar until smooth.
- Add unsweetened cocoa powder and beat until well incorporated.
- Add eggs one at a time, beating on low speed just until combined.
- Stir in 1 teaspoon of vanilla extract and the reserved chocolate mixture until blended.
- Pour the filling over the cooled crust.

Bake:
- Bake the cheesecake in the preheated oven for 45-50 minutes, or until the center is almost set.

Prepare Topping:
- For the topping, melt the remaining semisweet chocolate chips in a saucepan over low heat, stirring until smooth.
- Remove the chocolate from the heat and stir in the remaining heavy whipping cream and vanilla extract until well mixed.
- Spread the topping over the baked cheesecake.

Chill:
- Refrigerate the cheesecake overnight to set.

Serve:
- Just before serving, garnish with whipped cream and miniature chocolate kisses if desired.
- Carefully run a knife around the edge of the pan to loosen the cheesecake, then remove the sides of the pan.
