Description:

Indulge in the decadent delight of Julia’s Chocolate Truffle Tartlets. These miniature marvels are intensely chocolaty, with a pastry shell that strikes the perfect balance between a cookie crust and a buttery, flaky pie dough. The filling is a luscious blend of creamy bittersweet chocolate truffle, punctuated by the crunch of milk chocolate, white chocolate, and crackly biscotti. Elegant, sophisticated, and utterly irresistible, these tartlets are sure to captivate your taste buds.

Ingredients:

  • 1 portion Julia’s Chocolate Tart Dough
  • 5 tablespoons unsalted butter
  • 6 ounces bittersweet chocolate
  • 8 large egg yolks
  • 1 teaspoon vanilla extract
  • 1/4 cup sugar
  • 2 ounces white chocolate
  • 2 ounces milk chocolate
  • 4 pieces biscotti

Instructions:

Step Description
1 Line a jelly roll pan with parchment paper and set aside.
2 Remove the bottoms from six 4 1/2 inch fluted tartlet pans.
3 Cut the dough into six even pieces and shape each into a rough circle.
4 Roll out each piece into a circle, about 1/8 to 1/4 inch thick.
5 Fit the dough into the tartlet pans, pressing into the edges and trimming excess.
6 Chill the lined tartlet pans for at least 20 minutes.
7 Preheat the oven to 350°F. Prick the bottoms of the crusts with a fork and bake for 12-15 minutes.
8 Melt the butter and bittersweet chocolate until smooth, then allow to cool slightly.
9 In a mixer, beat egg yolks and vanilla extract until thick and pale. Gradually add sugar.
10 Fold a third of the egg mixture into the cooled chocolate, then fold in the rest.
11 Add cubed chocolates and biscotti to the mixture, folding gently to combine.
12 Divide the filling evenly among the cooled tartlet shells.
13 Smooth the filling and bake for 10-12 minutes, until set.
14 Allow the tartlets to cool for 20 minutes before serving.

Cook’s Notes:

  • For a larger tart, adjust baking time accordingly.
  • Add a ganache topping for extra indulgence.
  • Serve fresh or freeze for later enjoyment.
