Instructions:
Preparation Time: 1 hour 40 minutes
Cook Time: 6 hours
Total Time: 7 hours 40 minutes
Step 1: Prepare the Cake
- Preheat your oven to 350°F.
- Lightly grease a 9-inch round cake pan and line the bottom with parchment paper. Grease the paper and sides, then dust with flour.
- In a bowl, whisk together flour, baking powder, and salt until well combined.
- In a large bowl, using a mixer on medium-high speed, beat the eggs until pale and thick (about 3 minutes).
- Add sugar and vanilla, continue beating until very thick and tripled in volume (about 3 minutes more).
- Sprinkle dry ingredients over the wet ingredients and fold gently with a rubber spatula until blended.
- Pour the batter into the prepared pan and spread it evenly.
- Bake until the cake springs back when lightly touched, about 30 minutes.
- Let the cake cool on a rack for 15 minutes, then run a knife around the inside of the pan to loosen the cake.
- Invert the cake onto a cooling rack, peel off the parchment paper, and let it cool completely.
Step 2: Prepare the Syrup
- In a small saucepan, combine water and sugar. Cook over medium heat, stirring frequently, until the sugar dissolves and the mixture comes to a boil.
- Remove from heat and stir in the coffee liqueur and espresso powder. Set aside to cool to room temperature.
Step 3: Prepare the Filling
- In the top of a double boiler, whisk together egg yolks, sugar, coffee liqueur, and espresso powder.
- Set over barely simmering water and beat with a mixer on medium speed until very thick (about 6 minutes).
- Remove from heat and let it cool, stirring frequently.
- Meanwhile, in a separate bowl, beat heavy cream with a mixer on medium-high speed until stiff peaks form.
- Once the yolk mixture is cooled to room temperature, add mascarpone and vanilla. Beat until smooth and well blended.
- Fold in the whipped cream gently using a rubber spatula until fully incorporated.
Step 4: Assemble the Tiramisu
- Cut the cooled cake horizontally into 3 equal layers.
- Remove the bottom of a 9-inch springform pan and place the ring on a flat serving plate.
- Place one cake layer in the springform ring and generously brush and sprinkle with some of the syrup.
- Spread approximately 1 3/4 cups of the filling evenly over the cake layer.
- Add another cake layer on top, pressing gently, and repeat the syrup brushing and filling spreading.
- Place the third cake layer on top, press gently, brush with syrup, and spread the remaining filling evenly on top.
- Hold the pan ring and plate together, gently tap against the counter to settle the ingredients.
- Cover with plastic wrap and refrigerate for at least 6 hours or overnight to set.
Step 5: Serve
- Before serving, run a thin knife around the inside of the ring to loosen the cake.
- Unclasp and remove the ring gently.
- Garnish the Tiramisu with chocolate curls and a dusting of cocoa.
- Slice and serve chilled.
Note: Tiramisu is a labor-intensive dessert, but the effort is truly worth it for its exquisite taste and creamy texture. Once you’ve made it a few times, you’ll find the process smoother and quicker.
