3/4 Baking powder
1/4 Salt
4 Eggs
2/3 Sugar
1 1/4 Vanilla
1/2 Water
2 Dark rum
2 Instant espresso powder
6 Instant coffee
1/3 Sugar
1/4 Dark rum
1 Instant espresso powder
1/2 Instant coffee
1 1/2 Heavy cream
1 1/2 Mascarpone cheese
NA Vanilla extract
NA Chocolate curls

Instructions:

Preparation Time: 1 hour 40 minutes
Cook Time: 6 hours
Total Time: 7 hours 40 minutes

Step 1: Prepare the Cake

  1. Preheat your oven to 350°F.
  2. Lightly grease a 9-inch round cake pan and line the bottom with parchment paper. Grease the paper and sides, then dust with flour.
  3. In a bowl, whisk together flour, baking powder, and salt until well combined.
  4. In a large bowl, using a mixer on medium-high speed, beat the eggs until pale and thick (about 3 minutes).
  5. Add sugar and vanilla, continue beating until very thick and tripled in volume (about 3 minutes more).
  6. Sprinkle dry ingredients over the wet ingredients and fold gently with a rubber spatula until blended.
  7. Pour the batter into the prepared pan and spread it evenly.
  8. Bake until the cake springs back when lightly touched, about 30 minutes.
  9. Let the cake cool on a rack for 15 minutes, then run a knife around the inside of the pan to loosen the cake.
  10. Invert the cake onto a cooling rack, peel off the parchment paper, and let it cool completely.

Step 2: Prepare the Syrup

  1. In a small saucepan, combine water and sugar. Cook over medium heat, stirring frequently, until the sugar dissolves and the mixture comes to a boil.
  2. Remove from heat and stir in the coffee liqueur and espresso powder. Set aside to cool to room temperature.

Step 3: Prepare the Filling

  1. In the top of a double boiler, whisk together egg yolks, sugar, coffee liqueur, and espresso powder.
  2. Set over barely simmering water and beat with a mixer on medium speed until very thick (about 6 minutes).
  3. Remove from heat and let it cool, stirring frequently.
  4. Meanwhile, in a separate bowl, beat heavy cream with a mixer on medium-high speed until stiff peaks form.
  5. Once the yolk mixture is cooled to room temperature, add mascarpone and vanilla. Beat until smooth and well blended.
  6. Fold in the whipped cream gently using a rubber spatula until fully incorporated.

Step 4: Assemble the Tiramisu

  1. Cut the cooled cake horizontally into 3 equal layers.
  2. Remove the bottom of a 9-inch springform pan and place the ring on a flat serving plate.
  3. Place one cake layer in the springform ring and generously brush and sprinkle with some of the syrup.
  4. Spread approximately 1 3/4 cups of the filling evenly over the cake layer.
  5. Add another cake layer on top, pressing gently, and repeat the syrup brushing and filling spreading.
  6. Place the third cake layer on top, press gently, brush with syrup, and spread the remaining filling evenly on top.
  7. Hold the pan ring and plate together, gently tap against the counter to settle the ingredients.
  8. Cover with plastic wrap and refrigerate for at least 6 hours or overnight to set.

Step 5: Serve

  1. Before serving, run a thin knife around the inside of the ring to loosen the cake.
  2. Unclasp and remove the ring gently.
  3. Garnish the Tiramisu with chocolate curls and a dusting of cocoa.
  4. Slice and serve chilled.

Note: Tiramisu is a labor-intensive dessert, but the effort is truly worth it for its exquisite taste and creamy texture. Once you’ve made it a few times, you’ll find the process smoother and quicker.
