Instructions
Step 1: Preparing the Sponge Base
- Separate the eggs: Begin by separating the egg whites from the egg yolks. Place the egg whites in a bowl at room temperature.
- Whip the egg whites: Using a stand mixer or electric whisk, beat the egg whites until they start to turn white. Gradually add 75g of sugar to the egg whites and continue beating until stiff peaks form.
- Whip the egg yolks: In another bowl, whisk the egg yolks with the remaining sugar for 7-8 minutes until the mixture becomes light and fluffy.
- Combine: Gently fold the whipped egg whites into the whipped egg yolks, being careful not to deflate the mixture. Sift the flour and add it to the mixture, folding it in gently.
- Fill the molds: Transfer the batter to a piping bag and pipe the mixture into silicone molds shaped like half spheres (7-8 cm in diameter). Bake until golden and firm. Allow the sponge halves to cool completely on a wire rack.

- Soak the gelatin: Place the gelatin sheets in a bowl of cold water and let them soak for about 5 minutes.
