Ingredients

Instructions

Step 1: Preparing the Sponge Base

  1. Separate the eggs: Begin by separating the egg whites from the egg yolks. Place the egg whites in a bowl at room temperature.
  2. Whip the egg whites: Using a stand mixer or electric whisk, beat the egg whites until they start to turn white. Gradually add 75g of sugar to the egg whites and continue beating until stiff peaks form.
  3. Whip the egg yolks: In another bowl, whisk the egg yolks with the remaining sugar for 7-8 minutes until the mixture becomes light and fluffy.
  4. Combine: Gently fold the whipped egg whites into the whipped egg yolks, being careful not to deflate the mixture. Sift the flour and add it to the mixture, folding it in gently.
  5. Fill the molds: Transfer the batter to a piping bag and pipe the mixture into silicone molds shaped like half spheres (7-8 cm in diameter). Bake until golden and firm. Allow the sponge halves to cool completely on a wire rack.

Step 2: Preparing the Coffee Cream Filling

  1. Soak the gelatin: Place the gelatin sheets in a bowl of cold water and let them soak for about 5 minutes.
  2. Heat the cream: In a saucepan, combine the fresh cream, butter, and egg yolks. Stir gently over low heat until the butter melts.
  3. Brew the coffee: Brew a strong coffee using a stovetop espresso maker. Add 75ml of water to the coffee maker’s boiler, ensuring not to exceed the safety valve. Fill the filter with ground coffee, leveling it out by tapping the filter. Close the coffee maker tightly and heat it on low flame. Once the coffee starts rising, you will notice a dense foam form on top.
  4. Add the coffee: Once the coffee has brewed, remove the pan from heat and pour in the hot coffee. Stir to combine.
  5. Cool the mixture: Pour the coffee cream into a low, wide baking dish, covering the top with plastic wrap to prevent a skin from forming. Let it chill in the refrigerator for 2-3 hours until fully set.

Step 3: Preparing the Coffee Syrup

  1. Make the syrup: In a small saucepan, combine water and sugar. Heat the mixture until the sugar dissolves completely and the syrup comes to a boil. Remove from heat and allow it to cool to room temperature.

Step 4: Assembling the Coffee Delights

  1. Hollow the sponge: Once the sponge bases have cooled, carefully scoop out the centers of the flat side, reserving the removed pieces. Place the hollowed-out halves back into the silicone mold for easy handling.
  2. Soak the sponge: Using a spoon or small brush, soak the hollowed centers with the prepared coffee syrup, allowing them to absorb the liquid.
  3. Whisk the cream: Take the chilled cream mixture from the refrigerator and place it in a blender. Add 2 teaspoons of ground coffee and mix it until smooth and well-blended. Transfer the mixture to a piping bag.
  4. Fill the sponge: Pipe the coffee cream into the hollowed-out centers of the sponge half-spheres. Compress and let the cream set for a few minutes to firm up before removing them from the mold.
  5. Make the topping: In a separate bowl, whisk the remaining fresh cream and powdered sugar until stiff peaks form. This will be used to decorate the coffee delights.
  6. Coat the sponge: Transfer the coffee delights onto a wire rack and place a tray beneath to catch any excess cream. Pour the remaining cream over each half-sphere, covering them completely. Place them in the refrigerator for about 2 hours to set and firm up.
  7. Decorate: Once the delights have set, transfer them onto a serving plate. Decorate each one with a dollop of whipped cream and a coffee bean on top for an elegant finishing touch.
