Ingredients:

  • 1 pastry sheet
  • 2/3 cup water
  • 2 tablespoons caster sugar
  • 2 tablespoons instant coffee
  • 1/3 cup coffee liqueur
  • 4 egg yolks
  • 1/3 cup caster sugar
  • 250g mascarpone cheese
  • 300ml heavy cream
  • 1 pack of ladyfingers

Instructions:

  1. Prepare the Pastry:

    • Place the pastry sheet on a greased baking tray and prick it all over with a fork.
    • Bake at 180Β°C (356Β°F) for about 10 minutes or until golden brown.
    • Let it cool, then trim it to fit a 23cm square cake tin.
  2. Make the Coffee Syrup:

    • In a small saucepan, combine water, 2 tablespoons of caster sugar, and instant coffee.
    • Stir over gentle heat until the sugar is dissolved.
    • Remove from heat and stir in the coffee liqueur. Allow it to cool.
  3. Prepare the Mascarpone Cream:

    • In a heat-proof bowl, place the egg yolks and 1/3 cup of caster sugar over a saucepan of simmering water.
    • Beat for 5 minutes until the mixture thickens.
    • Remove from heat and continue beating until it cools down.
    • Gently blend in the mascarpone cheese.
    • In another bowl, whisk the heavy cream until stiff peaks form, then fold it into the mascarpone mixture.
  4. Assemble the Slice:

    • Line the base and sides of a 23cm square cake tin with plastic wrap.
    • Spread 1/3 of the mascarpone cream mixture into the tin.
    • Dip half of the ladyfingers into the coffee syrup mixture, ensuring they are completely coated but not soaked, then arrange them over the cream layer.
    • Spread half of the remaining mascarpone cream over the ladyfingers.
    • Repeat with the remaining ladyfingers and cream mixture.
    • Finally, place the prepared pastry sheet on top.
    • Cover the tin with plastic wrap and refrigerate overnight.
  5. Serve:

    • To serve, invert the slice onto a board so that the pastry forms the base.
    • Remove the plastic wrap.
    • Cut into squares and serve dusted with cocoa powder.
    • Garnish with mixed fresh berries for a pop of color and extra freshness.
