Perfect for any occasion, this cheesecake combines the rich, velvety texture of cream cheese with the delightful crunch of chocolate cookies, making each bite a perfect balance of flavors. Whether you’re hosting a gathering or simply treating yourself to a special dessert, this recipe is sure to impress!

Ingredients:

Ingredient Quantity
Chocolate cookies (for base) 300g
Butter 55g
Cream cheese (spreadable) 500g
Sugar 120g
Vanilla extract 1 tsp
Fresh liquid cream (for whipping) 300g
Chocolate cookies (for topping) 125g
Gelatin sheets 10g
Chocolate cookies (for garnish) 80g

Instructions:

Step 1: Prepare the Base

  1. Begin by melting the butter. In a small saucepan, heat the butter on low until fully melted, then allow it to cool slightly.
  2. While the butter cools, place the 300g of chocolate cookies into a food processor or blender. Pulse until the cookies are finely crushed into crumbs.
  3. Transfer the cookie crumbs to a mixing bowl and pour in the melted butter. Stir the mixture well using a spoon until all the crumbs are coated evenly with butter.

Step 2: Assemble the Base

  1. Grease and line a 22 cm springform pan with parchment paper. This will help you easily remove the cheesecake once it’s ready.
  2. Pour the buttery cookie crumbs into the prepared pan and press them down firmly to form a solid, even base. You can use the back of a spoon to press it down tightly.
  3. Place the pan in the refrigerator for at least 30 minutes or in the freezer for about 15 minutes to set the crust.

Step 3: Prepare the Filling

  1. While the base is chilling, soak the gelatin sheets in a bowl of cold water for about 10 minutes to soften.
  2. In the meantime, pour the fresh liquid cream (reserving two tablespoons) into a stand mixer or bowl. Use the whisk attachment to whip the cream until stiff peaks form.
  3. Once the cream is whipped, add the vanilla extract and continue to whisk for a few more seconds to combine.

Step 4: Melt the Gelatin

  1. After the gelatin has softened, gently heat the two tablespoons of reserved cream in a small bowl or saucepan. Add the softened gelatin sheets to the warm cream, stirring until the gelatin dissolves completely. Allow it to cool slightly to room temperature.

Step 5: Combine the Cream Cheese Mixture

  1. In a separate large bowl, mix the cream cheese with the sugar until smooth and creamy. You can use a hand mixer or whisk to do this.
  2. Slowly add the cooled gelatin mixture into the cream cheese mixture. Stir gently to combine.
  3. Gradually fold in the whipped cream, adding it a little at a time. Use a spatula to gently fold the whipped cream into the cream cheese mixture, working from the bottom up to maintain the airy texture.

Step 6: Assemble the Cheesecake

  1. Once the cream cheese filling is smooth and well combined, pour it over the chilled cookie base. Use a spatula to smooth the top into an even layer.
  2. Place the cheesecake in the refrigerator for at least 4 hours or overnight to allow it to set and firm up.

Step 7: Garnish and Serve

  1. After the cheesecake has set, carefully remove the springform pan and transfer the cheesecake to a serving plate.
  2. Decorate the top with roughly broken chocolate cookies. Arrange the pieces in the center and scatter more cookie crumbs around the edges for a beautiful presentation.
  3. Your Cookies Cheesecake is now ready to serve! Slice it into generous portions, and enjoy the delightful contrast of creamy cheesecake and crunchy chocolate cookie goodness.

Tips for Perfecting Your Cookies Cheesecake:

  • For the base, feel free to experiment with different types of cookies if you prefer a variation in flavor.
  • Be sure to allow the gelatin mixture to cool before adding it to the cream cheese mixture to avoid curdling.
  • For a richer flavor, you can add a touch of melted chocolate to the cheesecake filling or drizzle some on top for an extra indulgence.

This cookies cheesecake is a decadent dessert that combines the best of both worlds: a smooth, creamy filling with a crunchy, sweet cookie crust. Perfect for holidays, parties, or just a special treat, it’s sure to satisfy any dessert lover’s cravings. Enjoy every creamy, crunchy bite!
