Description:

Indulge guilt-free with these decadent low carb chocolate covered pecans. Perfect as a dessert or snack, they can also be made with almonds for a delightful treat on Valentine’s Day or any special occasion.

Ingredients:

  • 1 cup pecan halves
  • 2 tsp Splenda (or any sugar substitute)
  • 2 tsp ground cinnamon
  • 1/4 cup unsalted butter
  • 7 oz dark chocolate (at least 70% cocoa), chopped
  • 1/2 cup heavy cream
  • 1/2 tsp vanilla extract

Instructions:

  1. Prepare Pecans:

    • In a plastic bowl with a lid, combine pecan halves, 2 tsp Splenda, and ground cinnamon. Close the lid and shake vigorously until the pecans are evenly coated.
  2. Melt Chocolate Mixture:

    • In a double boiler over low heat, melt unsalted butter and chopped dark chocolate together. Stir occasionally until smooth.
  3. Add Cream and Sweetener:

    • Gradually pour in heavy cream while stirring continuously. Add the remaining Splenda and vanilla extract. Mix well until the mixture is smooth and fully combined. Remove from heat.
  4. Coat Pecans:

    • Either stir the pecans into the chocolate mixture until evenly coated, or dip each pecan into the chocolate mixture one at a time. Ensure each pecan is thoroughly coated.
  5. Chill:

    • Place the coated pecans on wax paper or a plate in a single layer. Chill in the refrigerator for at least one hour, or until the chocolate coating is firm.
