Ingredients:

  • 1 tablespoon olive oil
  • 1 large onion, finely chopped
  • 8 cloves garlic, minced
  • 1 pound ground beef
  • 1 1/2 pounds ground pork
  • 2 links spicy Italian sausage, casings removed
  • 1 tablespoon ground cumin
  • 1 teaspoon chipotle powder
  • 2 teaspoons crushed red pepper flakes
  • 1 tablespoon dried basil
  • 1 tablespoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon ground cinnamon
  • 1 tablespoon Asian hot sauce (optional)
  • 1 ounce semi-sweet chocolate, chopped
  • 2 cans (28 ounces each) crushed tomatoes
  • 4 cups low sodium chicken broth
  • 1 cup stout beer
  • 1/4 cup tomato paste
  • 2 cans (15 ounces each) black beans, drained and rinsed

Instructions:

  1. Heat Oil: In a large, heavy pot, heat the olive oil over medium-high heat.

  2. Saute Onions and Garlic: Add the chopped onions and minced garlic to the pot. Saute until the onions are soft and translucent, about 6 minutes.

  3. Add Meats: Incorporate the ground beef, ground pork, and spicy Italian sausage into the pot. Saute while breaking up the meats with a spoon or spatula, cooking for about 5 minutes until browned.

  4. Drain Fat: Once the meats are cooked, drain off any excess fat from the pot.

  5. Seasonings: Stir in the ground cumin, chipotle powder, crushed red pepper flakes, dried basil, dried oregano, dried thyme, and ground cinnamon. Allow the spices to toast in the pot for about 2 minutes, releasing their aromatic flavors.

  6. Special Touches: If using, add the Asian hot sauce and chopped semi-sweet chocolate to the pot. These ingredients will impart depth and richness to the chili.

  7. Tomatoes and Broth: Pour in the crushed tomatoes, low sodium chicken broth, stout beer, and tomato paste. Stir well to combine all the ingredients.

  8. Simmer: Reduce the heat to low and let the chili simmer uncovered, stirring occasionally, for approximately 1 hour and 15 minutes, or until it has thickened to your desired consistency.
