Instructions:

  1. Preheat Oven:
Preheat your oven to 350 degrees Fahrenheit.

  2. Prepare Cookie Sheet:
Lightly grease a cookie sheet and set it aside for later use.

  3. Ground Almonds:
In a food processor, pulse 3/4 cup of toasted almonds until finely ground.

  4. Mix Butter and Sugar:
In a large mixing bowl, beat the softened butter for about 30 seconds until creamy. Add sugar, cocoa powder, baking powder, baking soda, and salt. Continue beating until well combined.

  5. Add Eggs and Almond Extract:
Beat in the egg and almond extract until fully incorporated into the mixture.

  6. Incorporate Flour:
Gradually add the all-purpose flour to the mixture. Use a mixer to incorporate as much flour as possible.

  7. Fold in Almonds:
Using a spatula or by hand, stir in the ground almonds and 1 cup of sliced almonds until evenly distributed throughout the dough.

  8. Shape Dough:
Divide the dough into two equal portions. On separate pieces of wax paper, shape each portion into a 14-inch-long roll. Place the rolls on the prepared cookie sheet, ensuring they are at least 5 inches apart, and flatten slightly.

  9. Bake First Round:
Bake the dough for 25-30 minutes or until a wooden pick inserted near the centers comes out clean.

  10. Cool:
Allow the baked dough to cool on the cookie sheet for about an hour.

  11. Slice Biscotti:
Once cooled, use a sharp knife to diagonally cut each roll into 1/2-inch-thick slices.

  12. Bake Again:
Arrange the sliced biscotti, cut sides down, on ungreased cookie sheets. Bake for 8 minutes, then turn the slices over and bake for an additional 7 to 9 minutes, or until the cookies are dry and begin to crisp. Be careful not to overbake.

  13. Cool Completely:
Transfer the baked biscotti to wire racks and allow them to cool completely.

  14. Optional Glaze or Drizzle:
For an extra touch, you can prepare a glaze or drizzle by melting semi-sweet chocolate chips and white chocolate chips separately in microwave-safe bowls, each with 1 teaspoon of shortening added. Microwave on high for 1 minute, stirring once, then microwave for an additional 15 seconds if needed until smooth. Dip the biscotti into the melted chocolate or drizzle it over the tops for added flair.

Enjoy these delectable Chocolate-Almond Biscotti with your favorite hot beverage or savor them as a delightful treat any time of day!
