Instructions

Step 1: Melting the Chocolate and Butter

To begin, we’ll melt the dark chocolate and butter together using the double boiler method. Start by placing a medium-sized saucepan on the stove and adding 250 ml of water. Bring the water to a gentle simmer over medium heat. Place a heatproof bowl over the saucepan, ensuring that the water does not touch the bowl. This setup is known as a bain-marie.

Add the bite-sized pieces of dark chocolate and the unsalted butter to the bowl, stirring occasionally until both are completely melted and smooth. Once the chocolate and butter are melted, remove the bowl from the heat and set it aside to cool slightly.

Step 2: Preparing the Eggs (Or Egg Replacer)

While the chocolate mixture cools, separate the egg whites from the yolks. In a separate bowl, beat the egg whites using an electric mixer or a wire whisk until stiff peaks form. Set aside.

If you are making this recipe eggless, prepare your flax meal egg replacer according to the instructions on the package. Once prepared, set it aside as well.

Step 3: Combining the Ingredients

Once the chocolate mixture has cooled slightly, fold in the caster sugar, almond meal (Badam powder), vanilla extract, and egg yolks (or flax meal egg replacer if using). Use a rubber spatula to gently mix everything together, ensuring all ingredients are well incorporated.

Step 4: Folding in the Egg Whites

Next, gently fold the beaten egg whites into the chocolate mixture. Take care not to deflate the egg whites by stirring too vigorously—this step is crucial to maintain the light and airy consistency of the mud pie. If you’re making the cake egg-free, skip this step.

Step 5: Baking the Mud Pie

Prepare a springform pan by greasing and lining it with parchment paper. Pour the chocolate mixture into the prepared pan, smoothing the top with a spatula. Place the pan in a preheated oven at 180°C (350°F) and bake for 30 to 35 minutes. The mud pie is done when a tester (such as a knife or toothpick) inserted into the center comes out with a few cake crumbs stuck to it. The center should be slightly unset, not fully cooked through.

Step 6: Cooling and Unmolding

Remove the cake from the oven and allow it to cool completely in the pan. It is important not to unmold the mud pie until it has cooled completely, as it may still be delicate. Once cool, carefully remove the sides of the springform pan.

Step 7: Optional Garnishes

For an extra touch of indulgence, whip up a simple chocolate ganache and spread it over the cooled mud pie. Alternatively, you can top the cake with store-bought peanut brittle or even butterscotch for a crunchy, sweet contrast to the rich, soft chocolate. If you prefer, feel free to skip this step and serve the mud pie as is.

Step 8: Serving

Serve your flourless chocolate mud pie chilled or at room temperature. It’s perfect for tea time, parties, or simply as a decadent dessert to enjoy after a meal. Whether you serve it plain or with toppings, it’s sure to be a hit with all your guests.

Tips and Variations:

  • Egg-free Option: For those following a vegan or egg-free diet, simply use a flax meal egg replacer in place of the eggs. This ensures the texture remains similar to the original recipe.
  • Flavor Boost: Enhance the flavor by adding a tablespoon of coffee powder to the chocolate mixture, which will intensify the chocolate taste.
  • Toppings: Get creative with your toppings—whipped cream, crushed nuts, or even a dusting of cocoa powder can add a wonderful finishing touch to this rich dessert.
  • Make-Ahead: This pie can be made ahead of time and stored in the fridge. The flavors develop even more as it rests.

Enjoy your flourless chocolate mud pie, a simple yet decadent dessert that will surely satisfy any chocolate lover’s cravings!
