Description:
This delightful Biscuit Log recipe has been passed down from my mum, whose origins of the recipe remain a mystery, yet its popularity is undeniable. Perfect for parties or gatherings, this frozen treat might seem overly creamy on paper, but its texture transforms when frozen, offering a delightful balance of flavors.

Ingredients:

  • 500 ml heavy cream
  • 1 packet of your favorite biscuits
  • 100 ml liquor of your choice
  • 100 grams chocolate

Instructions:

  1. Prepare the Base:

    • Start by laying approximately 40cm of aluminum foil on a flat surface, ensuring it’s enough to fully cover the log you’re about to make.
    • Whip the heavy cream until it thickens, achieving a luscious consistency.
  2. Assembly:

    • Place a thick strip of the thickened cream in the middle of the aluminum foil, forming the base for your log.
    • Dunk the edges of each biscuit into the liquor, ensuring both sides are lightly coated.
    • Spread a generous layer of thickened cream on one side of a biscuit and place it upright at one end of the cream strip.
    • Repeat the process with the remaining biscuits, alternating the sides coated with cream, and pressing each biscuit gently against the previous one to create a sandwich effect.
  3. Finishing Touches:

    • Once all biscuits are assembled, use the remaining cream to cover the entire log, ensuring it’s evenly coated.
    • Grate the chocolate and sprinkle it generously over the cream-covered log, creating a deliciously decadent topping.
  4. Freezing:

    • Carefully wrap the log in the aluminum foil, ensuring it’s securely sealed.
    • Place the wrapped log in the freezer and allow it to freeze until firm, typically for a few hours or overnight.
  5. Serving:

    • Once frozen, remove the log from the freezer and let it sit at room temperature for a few minutes to soften slightly.
    • Slice the Biscuit Log into generous portions and serve immediately, delighting your guests with its creamy texture and irresistible flavor.
