Ingredients:

  • 9 eggs
  • 3/4 cup sugar
  • 1 1/2 cups walnuts, ground
  • 1 cup flour
  • 3 eggs (separate from the 9 mentioned above)
  • 2/3 cup sugar (separate from the 3/4 cup mentioned above)
  • 1/2 lb sweet butter
  • 2-3 tbsp rum
  • Cocoa powder (as needed for desired color)
  • Ground nuts (for coating)
  • Slivered almonds (for decoration)

Instructions:

  1. Preheat Oven: Begin by preheating your oven to 350°F (175°C).

  2. Prepare Batter:

    • In a mixing bowl, combine the egg yolks and 3/4 cup of sugar. Mix until well combined.
    • Add the ground walnuts and flour to the egg yolk mixture, then gently fold in the beaten egg whites until fully incorporated.
  3. Bake: Pour the batter into a 16×18-inch pan or a large jelly roll pan lined with greased wax paper. Smooth the batter evenly.

  4. Bake: Place the pan in the preheated oven and bake for 10-20 minutes, or until the cake is lightly golden and springs back when touched lightly.

  5. Prepare Filling:

    • While the cake is baking, prepare the filling. Cook until thickened, then allow it to cool.
    • In a separate bowl, cream the sweet butter, then add 2-3 tablespoons of rum and cocoa powder to achieve the desired color. Mix well.

    • Cover the log with ground nuts and stud with slivered almonds to resemble bark.
