Overview:
Baumstam Log is a delightful German dessert, passed down from my friend Susan K., who generously shared this cherished recipe after a memorable dinner party in 1985. This cake, boasting a rich history and flavor, is sure to impress your guests and tantalize their taste buds.
Ingredients:
- 9 eggs
- 3/4 cup sugar
- 1 1/2 cups walnuts, ground
- 1 cup flour
- 3 eggs (separate from the 9 mentioned above)
- 2/3 cup sugar (separate from the 3/4 cup mentioned above)
- 1/2 lb sweet butter
- 2-3 tbsp rum
- Cocoa powder (as needed for desired color)
- Ground nuts (for coating)
- Slivered almonds (for decoration)

Preheat Oven: Begin by preheating your oven to 350°F (175°C).

Prepare Batter:
- In a mixing bowl, combine the egg yolks and 3/4 cup of sugar. Mix until well combined.
- Add the ground walnuts and flour to the egg yolk mixture, then gently fold in the beaten egg whites until fully incorporated.

Bake: Pour the batter into a 16×18-inch pan or a large jelly roll pan lined with greased wax paper. Smooth the batter evenly.

Bake: Place the pan in the preheated oven and bake for 10-20 minutes, or until the cake is lightly golden and springs back when touched lightly.

- While the cake is baking, prepare the filling. Cook until thickened, then allow it to cool.
- In a separate bowl, cream the sweet butter, then add 2-3 tablespoons of rum and cocoa powder to achieve the desired color. Mix well.

- Once the cake is baked, remove it from the oven and carefully turn it out onto a sugared towel, starting at one of the long sides.
- Spread the filling evenly over the surface of the cake, reserving some for the outside.
- Carefully roll up the cake, starting from the long side, to form a log shape.
- Spread the reserved filling over the outside of the cake log, ensuring even coverage.

- Cut both ends of the roll at an angle to resemble tree branches.
- Arrange the cake log on a serving platter in a log-like fashion.
- Cover the log with ground nuts and stud with slivered almonds to resemble bark.
