Ingredients:

  • 12 hazelnuts (toasted and ground)
  • 2 tsp baking powder
  • 6 cups granulated sugar
  • 6 oz Kahlua
  • 5/8 tsp instant coffee
  • 1/2 cup strong coffee (brewed)
  • 4 tbsp boiling water
  • 2 sticks sweet butter
  • 2 large eggs (separated)
  • 2 oz semisweet chocolate chips

Instructions:

40 minutes Preheat your oven to 325 degrees Fahrenheit.
Grease a 9-inch springform pan generously.
In a food processor, finely grind the toasted hazelnuts until they reach a fine consistency.
Mix in the baking powder with the ground hazelnuts and set the mixture aside.
In a large bowl, beat the egg yolks with granulated sugar until they become pale in color.
Add the ground hazelnuts mixture, Kahlua, and melted chocolate into the bowl, and mix until well combined.
In a separate bowl, beat the egg whites until they form stiff peaks.
Gently fold 1/3 of the egg whites into the chocolate mixture to lighten it.
Carefully fold in the remaining egg whites until no white streaks remain.
Pour the batter into the prepared springform pan.
60-70 minutes Bake in the preheated oven for 60-70 minutes, or until the top of the cake springs back when lightly touched.
Allow the cake to cool on a wire rack.
