Description: I posted this recipe as a result of a request for “Church Windows.” I made this one Christmas ages ago with a friend and maybe it’s time to make it again! These would look so attractive on a goodie plate for family, friends, or for a holiday get-together! (You could use different colored miniature marshmallows to reflect whatever season it is!) (Times do not include time in freezer)

Ingredients:

  • 2 tablespoons butter
  • 2 eggs
  • 1 cup powdered sugar
  • 1 cup miniature marshmallows
  • 1/2 cup chopped nuts
  • 1/2 cup shredded coconut

Instructions:

  1. Melt Chocolate and Butter: In a saucepan over low heat, melt the chocolate and butter until smooth and well combined.

  2. Add Egg and Beat: Once melted, add the eggs to the chocolate mixture and beat well until fully incorporated.

  3. Prepare Nut Mixture: In a separate bowl, combine the powdered sugar, chopped nuts, and miniature marshmallows, mixing them thoroughly.

  4. Combine Mixtures: Pour the melted chocolate mixture into the bowl with the nut mixture, stirring until all ingredients are well combined.

  5. Prepare Wax Paper: Sprinkle a sheet of waxed paper with shredded coconut, ensuring an even layer.

  6. Shape Chocolate Mixture: Transfer the chocolate-nut mixture onto the coconut-sprinkled waxed paper, shaping it into a roll.

  7. Wrap and Seal: Roll the mixture into a tight cylinder, using the waxed paper to help shape it. Twist the ends of the waxed paper to seal the roll securely.

  8. Optional Additional Wrapping: For a neat appearance and to preserve freshness, wrap the roll in an additional sheet of waxed paper, resembling a large taffy roll.

  9. Freeze: Place the wrapped chocolate roll in the freezer and keep it there until ready to slice. This will allow it to firm up for easier cutting.
