Instructions

  1. Begin by processing the biscuits in a food processor until they resemble fine breadcrumbs. Add the melted butter and process until well combined, creating a buttery biscuit mixture.

  2. Firmly press the biscuit mixture over the base and sides of a 20 cm round springform cake pan, ensuring an even layer.

  3. Chill the prepared crust in the refrigerator for 30 minutes, allowing it to firm up.

  4. In the meantime, combine 2 tablespoons of cream, brown sugar, and the additional butter in a small saucepan. Stir over low heat for 3-4 minutes, or until the sugar has completely dissolved. Remove from heat and set aside to cool.

  5. In another saucepan, melt the chocolate with 2 tablespoons of cream over low heat, stirring until smooth. Once melted, set aside to cool slightly.

  6. Prepare the gelatin by whisking it into the boiling water with a fork until fully dissolved. Allow it to cool slightly before proceeding.

  7. Using an electric mixer, beat the cream cheese and caster sugar together in a bowl until the mixture is smooth and creamy.

  8. In a separate bowl, whisk the remaining cream until soft peaks form. Gently stir the gelatin mixture into the cream cheese mixture, followed by the chopped Mars bars.

  9. Carefully fold in the whipped cream, ensuring that the mixture remains light and airy.

  10. Pour half of the cheese mixture into the prepared crust and drizzle with half of the caramel and melted chocolate sauces. Using a skewer, gently swirl through the mixture to create a marbled effect.

  11. Repeat the process with the remaining cheese mixture and sauces, swirling to achieve a visually appealing design.

  12. Cover the cheesecake and chill in the refrigerator for 3 hours, or until set and firm.

  13. Once set, slice the cheesecake and serve chilled, savoring each creamy bite of this delightful dessert.

This Mars Bar Cheesecake is not only a feast for the eyes but also a decadent indulgence that promises to please everyone at your table. Enjoy!
