Instructions

  1. Prepare the Crust:

    • In a mixing bowl, combine the crumbled Oreo biscuits, melted unsalted butter, and Nutella spread.
    • Using a hand blender, blend the mixture until fully combined. When you pinch the mixture, it should hold together well.
    • Press this crust mixture into the base of individual serving bowls or glasses, ensuring an even layer. Refrigerate to chill while you prepare the filling.
  2. Make the Filling:

    • In a clean mixing bowl, add the cream cheese and Nutella spread. Beat with a hand mixer on medium speed until the mixture is smooth and well-combined.
    • Add the caster sugar and heavy whipping cream, and beat again until evenly blended.
    • Stir in the vanilla extract and cocoa powder. You can blend the mixture for another 30 seconds to ensure everything is well incorporated.
  3. Dissolve the Gelatin:

    • In a small bowl, add the gelatin and 2 tablespoons of water. Place the bowl in a saucepan filled with lukewarm water and allow the gelatin to dissolve completely. (You can also keep the saucepan on a simmer, but ensure the water does not reach a boiling point.)
    • Once the gelatin is dissolved, remove the bowl from the water and set it aside.
  4. Combine Gelatin with the Filling:

    • Add the dissolved gelatin into the Nutella-cream cheese mixture. Blend for a few seconds to incorporate the gelatin evenly.
  5. Assemble the Cheesecake:

    • Remove the cups of Oreo crust from the refrigerator. Pour the Nutella-cream cheese filling into each cup, over the chilled crust. Smooth the surface with a butter knife or the back of a spoon for an even layer.
    • Refrigerate the cheesecakes for 6–7 hours, or ideally overnight, to allow the cheesecake to set and firm up.
  6. Serve:

    • Once the cheesecakes are fully set, remove them from the fridge.
    • Before serving, garnish each cheesecake with crushed Oreo biscuits and a fresh cherry on top for a delightful finishing touch.
