1 Preheat your oven to 425ยฐF (220ยฐC).
2 Line a 9-inch square baking pan with foil, ensuring to cover the sides, and either spray the foil with nonstick cooking spray or brush it with vegetable oil.
3 In a double boiler, melt the semisweet chocolate and unsalted butter together, stirring until smooth.
4 Add the pure vanilla extract and ground cinnamon to the chocolate mixture, stirring thoroughly to combine.
5 Remove the mixture from heat and allow it to cool to room temperature.
6 In the bowl of your stand mixer, beat the eggs on high speed until they become very frothy and approximately triple in volume, about 5 minutes.

11 After baking, turn off the oven but leave the brownies inside with the door closed for an additional 10 minutes.
12 After 10 minutes, remove the brownie pan from the larger water bath pan and place it on a wire rack to cool while preparing the glaze.
13 To make the glaze, heat the heavy cream and dark chocolate together in a double boiler over simmering water, stirring until the chocolate is melted and the mixture is smooth.
14 Pour the hot glaze over the cooled brownies, using a spatula to spread it evenly across the surface.
15 Set the pan aside to cool completely.
16 Once cooled, cover the pan with plastic wrap and refrigerate overnight.
17 The next day, cut the chilled brownie into 12 squares.
18 For optimal taste, allow the brownies to come to room temperature for 30 minutes before serving.
