Peach Clafoutis: A Sweet French Delight

Category: Desserts
Servings: 6

Clafoutis is a traditional French dessert known for its delightful balance of flavors and textures, combining a rich custard-like batter with fresh fruit. In this version, the sweetness of peaches takes center stage, making it the perfect treat to enjoy in the summer months when peaches are at their peak ripeness. This Peach Clafoutis recipe offers a wonderful way to showcase the natural sweetness of peaches, complemented by the gentle flavor of vanilla and the slight kick of brandy.

Ingredients

Ingredient Quantity
Yellow peaches 250g
White peaches 250g
Brandy 20ml
Whole milk 200ml
All-purpose flour (00) 90g
Salt 1 pinch
Granulated sugar 100g
Eggs 3
Vanilla extract 1 tsp
Butter 10g
Granulated sugar (for topping) 30g
Powdered sugar (for dusting) to taste

Instructions

1. Preheat the Oven
Start by preheating your oven to 180°C (350°F). Make sure the temperature is steady before you begin assembling your Peach Clafoutis.

2. Prepare the Peaches
Wash the peaches thoroughly and cut them into halves or quarters. Remove the pits and peel off the skins. Slice the peaches into moderately thin pieces, keeping the slices uniform in size for even cooking.

3. Make the Batter
In a large mixing bowl, beat the eggs with the granulated sugar using an electric whisk until the mixture is smooth and creamy. Gradually add the flour, mixing it in with a wooden spoon until well combined. Slowly pour in the milk while continuing to mix to prevent lumps. Add a pinch of salt and vanilla extract to the batter and stir to incorporate.

4. Layer the Peaches
Butter a baking dish (preferably a round or oval shape). Arrange the peach slices in the bottom of the dish, creating a circular pattern or layering them in multiple layers for an added visual effect.

5. Pour the Batter
Once the peaches are arranged, gently pour the prepared egg and milk mixture over the peaches, ensuring they are mostly covered, except for the top layer. If you have more peaches, feel free to add extra layers.

6. Bake
Place the baking dish in the preheated oven and bake for about 50 minutes or until the clafoutis is golden brown on top. The batter should be set, and the peaches will soften beautifully as they bake.

7. Serve
After the baking time, remove the Peach Clafoutis from the oven. Sprinkle it with the 30g of granulated sugar to add a nice sweet glaze on top. Let it cool for a few minutes before dusting with powdered sugar. This dessert is best served slightly warm but can also be enjoyed at room temperature.

Serving Tips

Peach Clafoutis can be served on its own or paired with a dollop of fresh cream or a scoop of vanilla ice cream for an indulgent treat. Its delicate, custardy texture pairs wonderfully with a light, crisp white wine or a refreshing glass of iced tea.

Enjoy this deliciously simple yet elegant French dessert with your friends and family at your next gathering.
