Description:

Indulge in the decadent delight of this Peanut Butter Cream Tart, a timeless creation from the pages of Bon Appetit’s December 2002 issue. This recipe boasts simplicity without compromising on taste or visual appeal. The lusciously light and creamy peanut butter filling harmonizes exquisitely with the chocolate-infused crust. Prepare this tart a few hours or even a day in advance to allow the flavors to meld and the crust to achieve the perfect texture.

Ingredients:

For the Crust:

  • 1 1/2 cups of cookie crumbs
  • 5 tablespoons of unsalted butter, melted

For the Filling:

  • 6 ounces of cream cheese, softened
  • 3/4 cup of creamy peanut butter
  • 1 cup of heavy cream
  • 1 cup of powdered sugar
  • 1 teaspoon of vanilla extract
  • 1 ounce of chocolate (for garnish)

Instructions:

For the Crust:

  1. Preheat your oven to 325°F (163°C).
  2. Butter a 9-inch diameter tart pan with a removable bottom.
  3. In a medium bowl, mix together the cookie crumbs and melted butter until moist clumps form.
  4. Press the mixture onto the bottom and up the sides of the prepared tart pan.
  5. Bake the crust until set, about 10 minutes.
  6. Allow the crust to cool completely.

For the Filling:

  1. In a large bowl, using an electric mixer, beat the cream cheese and peanut butter until smooth.
  2. In another large bowl, using clean, dry beaters, beat the heavy cream, powdered sugar, and vanilla extract until soft peaks form.
  3. Whisk half of the whipped cream into the peanut butter mixture.
  4. Gently fold in the remaining whipped cream.
  5. Transfer 3 tablespoons of the filling to a small bowl and set aside.
  6. Spread the remaining filling evenly over the cooled crust.
  7. Melt the chocolate in a double boiler, then whisk in the reserved 3 tablespoons of filling.
  8. Immediately transfer the chocolate mixture to a pastry bag fitted with a 1/8 inch tip.
  9. Pipe the chocolate mixture in a spiral pattern atop the filling.
  10. Using a small, sharp knife, start at the center of the tart and draw the tip of the knife toward the edge.
  11. Move the knife over 2 inches and start at the edge, drawing the knife toward the center.
  12. Repeat this process to create a beautiful web pattern.
  13. Chill the tart until cold, preferably for a few hours or up to 2 days ahead.
  14. Keep the tart chilled until ready to serve.
