Category: Desserts
Servings: 1 (or approximately 8 servings depending on size)

Ingredients

Ingredient Amount
All-purpose flour 200g
Sugar 170g
Butter 170g
Eggs 3
Egg yolk 1
Baking powder 1 tsp
Vanilla bean 1
Salt 1 pinch
Pears 200g
Mixed berries 170g
Lemon juice 1 tbsp
All-purpose flour (for crumble) 75g
Almond flour 75g
Brown sugar 75g
Butter (for crumble) 75g
Lime zest 1 tsp
Salt (for crumble) 2 pinches
Butter (for greasing) to taste

Instructions

  1. Prepare the Fruit:
Start by washing the mixed berries under running water. Pat them dry with paper towels. For the pears, cut them in half, removing the core and slicing into wedges. Place the pear slices into a bowl and drizzle with lemon juice to prevent browning. Set aside.

  2. Make the Cake Batter:
In a large mixing bowl, use an electric mixer to beat the butter and sugar together until smooth and creamy. Gradually add the whole eggs and continue mixing until everything is well incorporated into a smooth, fluffy batter. Add the egg yolk and mix until fully combined.

  3. Incorporate Dry Ingredients:
Sift the all-purpose flour and baking powder together to ensure there are no lumps. Gradually fold the sifted dry ingredients into the batter using a spatula until the mixture resembles the consistency of cake batter—smooth but slightly thick.

  4. Prepare the Pan:
Grease a 20×30 cm (8×12 inch) baking pan with butter, using a kitchen brush for even coverage. Line the pan with parchment paper to make it easier to remove the cake after baking.

  5. Assemble the Cake:
Pour the prepared batter into the baking pan. Use the back of a spoon, slightly dampened with water, to gently level the batter across the entire surface. Once the batter is evenly spread, arrange the pear slices in a regular pattern across the top, ensuring they’re spaced evenly. Scatter the mixed berries over the pears, covering the surface generously.

  6. Make the Crumble:
In a separate small bowl, combine the cold butter, brown sugar, all-purpose flour, and almond flour. Add the salt and grate the lime zest directly into the mixture. Use your fingers or a pastry cutter to work the butter into the dry ingredients until a crumbly texture forms.

  7. Top the Cake with Crumble:
Evenly sprinkle the prepared crumble mixture over the fruit-topped batter in the baking pan. The crumble should cover the fruit and batter completely, creating a delightful, textured topping.

  8. Bake and Cool:
Place the cake in a preheated oven at 180°C (350°F) and bake for about 35-40 minutes, or until the top is golden and a toothpick inserted into the center comes out clean. The crumble should have a nice, crisp texture, and the pears should be tender.

  9. Serve:
Once baked, allow the pear crumb cake to cool slightly in the pan. For serving, it’s best to cut it into squares directly in the pan, keeping the crumb topping intact. The pear crumb cake can be served warm or at room temperature.

Tip: For a delightful twist, serve with a scoop of vanilla ice cream or a dollop of whipped cream. This dessert is perfect for any occasion, from family gatherings to a simple afternoon treat with tea.

Enjoy your Pear Crumb Cake, with the perfect balance of tender fruit and crunchy crumble topping!
