Ingredients

Quantity Ingredient
2 1/2 oz Bittersweet chocolate
9 oz Unsalted butter
2/3 cup Sugar
2 Eggs
1 tsp Vanilla extract
1/2 cup All-purpose flour
1/4 tsp Salt
1/2 cup Walnut halves
NA Cornstarch
4 1/2 tsp Gelatin powder
1/2 cup Cold water
1 cup Sugar
3/4 cup White corn syrup
1 tsp Vanilla extract
4 oz Bittersweet chocolate (for ganache)
2 oz Unsalted butter (for ganache)

Instructions

For the Brownie Layer:

  1. Begin your delightful creation by preheating your oven to 350°F (175°C), allowing it to reach the perfect baking temperature while you prepare your ingredients.

  2. Take an 8-inch square pan and grease it generously with unsalted butter. Next, line the pan with parchment paper, ensuring that the paper overhangs on the sides; this will make it easy to remove the brownies later.

  3. In a heatproof bowl, melt 2 1/2 oz of bittersweet chocolate over a pot of gently simmering water. Stir continuously to achieve a smooth and glossy chocolate. Once melted, remove it from the heat and allow it to cool to room temperature.

  4. Once the chocolate has cooled, stir in 9 oz of unsalted butter by hand until the mixture is completely smooth and well combined.

  5. Gradually add 2/3 cup of sugar to the chocolate mixture, stirring gently until fully incorporated. Follow this with 2 eggs, adding them one at a time, and mixing until blended after each addition.

  6. Incorporate 1 tsp of vanilla extract into the batter, adding a wonderful depth of flavor.

  7. Carefully mix in 1/2 cup of all-purpose flour and 1/4 tsp of salt into the chocolate mixture, folding it gently to maintain the airy texture, and finally stir in 1/2 cup of walnut halves for added crunch.

  8. Scrape the brownie batter into your prepared pan and bake for 19 to 22 minutes. The brownie layer should take on a dull color and feel firm to the touch when it’s ready. Once baked, allow it to cool completely in the pan.

For the Marshmallow Layer:

  1. Line another 8-inch square pan with parchment paper, dusting it generously with cornstarch to prevent sticking.

  2. In a small bowl, sprinkle 4 1/2 tsp of gelatin powder over 1/4 cup of cold water. Stir this mixture and let it sit for about 5 minutes to bloom.

  3. Melt the bloomed gelatin over low heat and keep it warm. In a separate saucepan, bring the remaining 1/4 cup of water, 1 cup of sugar, and 3/4 cup of white corn syrup to a boil over medium-high heat. Allow it to cook until the sugar mixture reaches 245°F (118°C) on a candy thermometer, which should take approximately 7 minutes.

  4. While the sugar mixture is heating, whip 2 egg whites in a bowl using beaters or a mixer until they become foamy.

  5. Once the sugar reaches the proper temperature, carefully pour it in a thin stream down the side of the bowl while continuing to mix on medium speed. This will create a beautiful meringue.

  6. After the sugar has been fully incorporated, add the melted gelatin and 1 tsp of vanilla extract, whipping the mixture on high speed until it thickens and turns a glorious white color, which should take about 4 minutes.

  7. Pour the marshmallow mixture into the prepared pan and sift a light layer of cornstarch over the top to prevent sticking. Allow the marshmallow to set for at least 2 hours before unmolding.

For the Truffle Ganache:

  1. To create the luscious ganache, heat 4 oz of cream in a saucepan until just below a simmer. Pour this hot cream over 4 oz of chopped bittersweet chocolate and let it sit for 1 minute.

  2. After a minute, stir the chocolate and cream mixture slowly until it becomes smooth and evenly blended. Then stir in 2 oz of unsalted butter until fully melted and incorporated.

  3. Allow the ganache to cool for at least 30 minutes, or if you’re preparing ahead, chill it until you’re ready to assemble the cake.

Assembly:

  1. Once the brownie layer is completely cooled, remove it from the pan by lifting the overhanging parchment paper.

  2. Brush the top of the brownie layer with a generous layer of the prepared ganache, making sure to cover it evenly. If your ganache has set up too much, simply rewarm it gently until it reaches a pourable consistency.

  3. Carefully dust off any excess cornstarch from the marshmallow layer and flip it over onto the brownie, removing the parchment paper with utmost care.

  4. Using a hot knife, cut the dessert into 9 to 16 squares, arranging them artfully on a serving platter.

  5. When the truffle ganache has cooled sufficiently to pipe, fill a piping bag and create delightful swirls on top of each square. If you desire, garnish each cake with a toasted walnut half for an elegant finish.
