Begin by heating the fresh cream, whole milk, and sugar in a saucepan. Stir occasionally over low heat until it begins to bubble gently. Once it reaches a boil, remove from heat.

While the milk and cream mixture is heating, soak the gelatin sheets in cold water for about 5 minutes to allow them to soften.

In another small saucepan, gently heat the whiskey over low heat for about 5 minutes. Once the whiskey is warmed, drain the gelatin sheets and squeeze out any excess water. Add the gelatin to the whiskey, stirring until fully dissolved.

Next, take four medium glass cups or serving glasses. Divide the whiskey-cream mixture into each glass, pouring approximately 50g into each. Cover the glasses with plastic wrap and refrigerate them for 24 hours to allow the semi-liquid Irish coffee to set.

While the mixture chills, prepare the coffee. Using a stovetop coffee maker (such as a Moka pot), fill the water chamber with cold, low-calcium water, ensuring not to exceed the safety valve. Securely close the coffee maker, and place it on a low, consistent flame. Allow the coffee to brew slowly. As the coffee rises, a thick foam will form on top. Be careful not to stir the coffee, as this would mix the foam with the coffee beneath. A spoon can be used to help avoid disturbance.
