Honey 1 tablespoon
Molasses 1/2 tablespoon
Baking Powder 1/2 teaspoon

For Graham Cracker Cake:

Brown Sugar (Demerara Sugar) 100 grams
Graham Cracker Crumbs 100 grams
Milk 90 ml
Whole Eggs 2

For Dark Chocolate Ganache:

Dark Chocolate, chopped 150 grams
Heavy Whipping Cream 110 grams

For Marshmallow Fluff:

Egg White 1
Lemon Juice 1 teaspoon
Caster Sugar 100 grams
Water 30 ml

Instructions:

Step 1: Prepare the Graham Crackers

  1. In a large bowl, beat together the butter, brown sugar, honey, and molasses until well combined.
  2. In another bowl, mix the baking powder, whole wheat flour, and all-purpose flour together. Sifting the dry ingredients will help remove any lumps and ensure a smooth dough.
  3. Gradually add the dry ingredients into the butter-sugar mixture, mixing until all ingredients are incorporated and a tight dough forms.
  4. Dust a parchment sheet with flour, then roll out the dough to about 1/4 – 1/2 inch thickness. Once rolled out, place the dough in the refrigerator for 30 minutes to chill.
  5. Preheat your oven to 180°C (350°F).
  6. After chilling, cut the dough into small squares, about 1.5 – 2 inches. This will help the cookies bake evenly.
  7. Bake the dough for 10-12 minutes, or until the edges begin to brown. Once done, remove from the oven and let them cool on a wire rack. You can break them into squares along the cuts made before baking.

Step 2: Make the Graham Cracker Cake

  1. Preheat your oven to 180°C (350°F) and prepare a cake pan by greasing it with butter or lining it with parchment paper.
  2. In a large mixing bowl, beat together the butter and brown sugar until light and fluffy.
  3. Add in the eggs one at a time, beating well after each addition.
  4. Gradually add the all-purpose flour, baking powder, and graham cracker crumbs, alternating with the milk. Mix until smooth.

  3. Add the water, a tablespoon at a time, to adjust the texture if needed. The fluff should hold its shape but remain spreadable.

  1. Once the graham cracker cake is completely cool, slice it into three even layers.
  2. Place the first layer of cake on your serving platter and spread a layer of dark chocolate ganache over it.
  3. Add a layer of marshmallow fluff on top of the ganache.
