Ricotta cheese (whole milk) 250g
Granulated sugar 150g
Eggs 120g
Dark chocolate 100g
Whole milk 30g
Unsweetened cocoa powder 30g
Baking powder 16g
Sunflower oil q.b.
All-purpose flour (for dusting) q.b.
Powdered sugar (for dusting) q.b.

Instructions:

  1. Begin by finely chopping the dark chocolate using a knife. Once chopped, melt the chocolate using a double boiler method, making sure it melts gently over low heat. Stir occasionally to prevent it from burning.

  2. While the chocolate is cooling down, place the ricotta cheese in a mixing bowl and add the granulated sugar. Mix until smooth, then add the eggs one by one. Stir well until the mixture becomes soft and fully combined, forming a creamy consistency.

  3. In a separate bowl, sift the all-purpose flour and baking powder together. Gradually add this dry mixture into the ricotta and egg mixture. Using a whisk, blend everything together until it is completely smooth.

  4. To intensify the flavor, sift in the unsweetened cocoa powder and mix gently until fully incorporated, ensuring the batter remains light and fluffy.

  5. Grease and lightly flour a round baking pan, about 18 cm in diameter and 10 cm in height. Pour the prepared batter into the pan, smoothing the top with a spatula for even baking.

  6. Place the pan in a preheated oven at 180°C (350°F) and bake for about 40-45 minutes, or until the cake is fully cooked. You can check doneness by inserting a toothpick in the center—it should come out clean when the cake is ready.

  7. Once baked, remove the cake from the oven and allow it to cool completely before removing it from the pan.
