Ingredients

  • 2 cups granulated sugar
  • 2 tablespoons unsalted butter, melted
  • 1/4 cup cream cheese
  • 2 1/2 cups granulated sugar
  • 2 cups sour cream
  • 1/4 cup eggs (about 3 large eggs)
  • 4 ounces white chocolate
  • 3 ounces bittersweet chocolate

Instructions

  1. Prepare the Crust: In a bowl, mix the cookie or cake crumbs with the granulated sugar and melted butter. Press firmly into the bottom of a 10-inch springform pan with 2-inch sides. Wrap the bottom of the pan in aluminum foil, ensuring the foil comes up the side of the pan.

  2. Preheat the Oven: Preheat your oven to 300°F. Also, ready a large pan deep enough to comfortably hold the springform pan.

  3. Prepare the Cheesecake Batter: In the bowl of your mixer fitted with the paddle attachment, beat the cream cheese on low speed until very soft. Add the granulated sugar and sour cream, mixing until thoroughly incorporated. Slowly add the eggs, one at a time, mixing until completely incorporated. Scrape down the sides of the bowl between additions. After adding the last egg, mix on low speed for an additional minute, then scrape down the sides of the bowl and mix for another 30 seconds.

  4. Divide the Batter: Split the batter evenly between three bowls.

  5. Melt the Chocolate: Place the bittersweet chocolate in a microwaveable bowl and microwave at 50% power for one minute or until completely melted. Repeat this step for the white chocolate. Mix each melted chocolate into separate portions of the cream cheese mixture.

  6. Layer the Cheesecake: Carefully pour the dark chocolate batter into the prepared springform pan. Gently shake the pan to settle the mixture. Spoon over the white chocolate mixture and then the milk chocolate mixture, shaking slightly to even out each layer.

  7. Bake: Place the springform pan into the larger pan. Pour very hot water around the springform pan so that it comes halfway up the sides. Bake the cheesecake for about 2 1/2 hours until the sides are set but the center is still slightly jiggly.

  8. Cool and Refrigerate: Remove the cheesecake from the oven and water bath. Remove the foil and let the cheesecake cool on a rack. Once cooled, refrigerate overnight or for at least 8 hours. For longer storage, tightly wrap the cheesecake in two layers of plastic and freeze for up to a month.

  9. Serve: To serve, remove the cheesecake from the springform pan, slice into 16 pieces, and serve with chocolate sauce and raspberries for a delightful finish.

Indulge in the rich, creamy goodness of this Triple Chocolate Cheesecake, perfect for any special occasion or simply as a decadent treat to satisfy your chocolate cravings.
