Description:
This Chocolate Turtle Cheesecake holds a special place in my heart, as it’s a recipe adapted in memory of an elderly friend who used to bring my daughters chocolate turtles from Toronto. Fondly known as Marvin’s Cheesecake in our family, it combines the rich flavors of chocolate, caramel, and pecans in a creamy cheesecake base, creating a delightful dessert that’s perfect for any occasion.
Ingredients:
- 2 cups graham cracker crumbs
- 6 tablespoons margarine, melted
- 14 ounces caramels
- 5 tablespoons evaporated milk
- 1 cup chopped pecans
- 16 ounces cream cheese, softened
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- 1/2 cup semi-sweet chocolate chips

1 | Combine graham cracker crumbs and melted margarine. Press onto the bottom and sides of a 9-inch springform pan. |
2 | Bake the crust at 350°F (175°C) for 10 minutes, then remove from the oven. |
3 | In a 1 1/2-quart heavy saucepan, melt the caramels with evaporated milk over low heat, stirring frequently until smooth. |
4 | Pour the melted caramel mixture over the prepared crust in the pan. |
5 | Sprinkle chopped pecans evenly over the caramel layer. |
6 | Using an electric mixer, beat the softened cream cheese with granulated sugar and vanilla extract on medium speed until well blended. |
7 | Add the eggs, one at a time, mixing well after each addition until the batter is smooth. |
8 | Stir in the semi-sweet chocolate chips until evenly distributed throughout the batter. |
9 | Pour the cream cheese mixture over the pecans in the pan, spreading it evenly. |
10 | Bake the cheesecake at 350°F (175°C) for approximately 40 minutes, or until the center is almost set. |
11 | Allow the cheesecake to cool in the pan on a wire rack. Once cooled, loosen the cake from the rim of the pan. |
12 | Chill the cheesecake in the refrigerator for several hours or overnight before serving. |
