Ingredients:

  • 1 onion
  • Tomatoes
  • Green bell pepper
  • Red bell pepper
  • Orange bell peppers
  • Yellow bell pepper
  • Garlic powder
  • Fresh lemon rind
  • Black pepper

Instructions:

  1. Preparation:

    • Ensure you have enough veggies to fill the tiers of your dehydrator.
    • Traci uses a 5-tier dehydrator, placing one of each veggie per stack.
  2. Prepare the Dehydrator:

    • Ready the dehydrator for use according to the manufacturer’s instructions.
  3. Slice the Veggies:

    • Wash the veggies thoroughly and slice them as per the instructions.
    • Arrange bell peppers on the bottom three tiers, onions on the next, and tomatoes on the top tier.
  4. Dehydration Process:

    • Turn on the dehydrator and let it operate as directed.
    • The duration will vary (8-12 hours) based on the thickness of the slices.
  5. Removing Dried Veggies:

    • Once dried, remove each veggie by hand.
    • For stubborn pieces, cool the dehydrator and gently scrape them off onto plastic wrap.
  6. Crushing the Seasonings:

    • Transfer the dried veggies to a bowl and crush them to your preferred size using the back of a tablespoon.
    • Add the dried lemon rind/zest at this stage.
  7. Bottling the Seasonings:

    • Place the seasoned flakes into a small bottle.
    • Add garlic powder and black pepper.
    • Cap the bottle, and your seasoning blend is ready for use.
  8. Optional Enhancements:

    • You can customize your seasoning blend further by incorporating dried herbs like basil, according to your taste preference.
  9. Storage Note:

    • Keep in mind that dried veggies yield a lesser amount of finished product.
    • For large batches, start several days in advance, drying one type of veggie at a time until all are dried thoroughly.
  10. Important Reminder:

    • Ensure that the veggies are completely dry to prevent mold and spoilage.

Now you’re ready to enjoy the flavorful convenience of Mrs. Traci Poole’s Salt Free Seasonings! 🌿
