Nasi Kebuli Sapi (Using a Rice Cooker)

Ingredients:

  • 5 cups rice (cleaned; a mix of red and white rice is preferred)
  • 250 grams beef, sliced
  • 1 large onion, finely chopped
  • 1 star anise
  • 2 stalks lemongrass, smashed
  • 1 cardamom pod
  • 2 kaffir lime leaves
  • 1/2 teaspoon ground cinnamon
  • Enough water
  • To taste: sugar and salt
  • Oil for sautéing

Spice Paste:

  • 1 handful shallots
  • 5 cloves garlic
  • 1/4 nutmeg
  • 1 teaspoon ground cumin
  • 1 teaspoon ground black pepper
  • 1 thumb-sized piece of ginger

Instructions:

  1. Prepare the Spice Paste: Blend the shallots, garlic, nutmeg, ground cumin, ground black pepper, and ginger into a fine paste.

  2. Sauté the Aromatics: In a pan, heat some oil and sauté the spice paste until fragrant. Add the chopped onion, star anise, smashed lemongrass, cardamom pod, kaffir lime leaves, and ground cinnamon. Cook until the onion is soft and aromatic.

  3. Cook the Beef: Add the sliced beef to the pan. Stir well to coat the meat with the spices. Season with sugar and salt. Pour in enough water to cover the beef. Simmer until the meat is tender and the liquid has reduced. Turn off the heat.

  4. Prepare the Rice Cooker: Place the cleaned rice in the rice cooker. Add the cooked beef and spice mixture. Stir to combine. Add water according to the rice cooker’s instructions for cooking regular rice.

  5. Cook the Rice: Set the rice cooker to the ‘Cook’ setting and wait for the cooking cycle to complete. Once done, let the rice sit for 5 minutes, then fluff it with a fork.

  6. Serve: Serve the Nasi Kebuli Sapi with cucumber pickles, fried emping crackers, crispy shallots, and sambal.
