Ingredients

For the Koftas Quantity
Cauliflower (gobi) 1 medium head
Paneer (Homemade Cottage Cheese), grated 1/2 cup
Potatoes (Aloo), cooked and mashed 4 medium
Corn flour 3 tablespoons
Red Chilli Powder 1 tablespoon
Coriander Powder (Dhania) 1 tablespoon
Cumin Powder (Jeera), roasted 1 teaspoon
Garam Masala Powder 1 teaspoon
Salt, to taste As required
For the Curry Quantity
Onions, finely chopped 2 medium
Tomatoes, pureed 4 medium
Ajwain (Carom Seeds) 1 teaspoon
Kashmiri Red Chilli Powder 1 1/2 tablespoon
Coriander Powder (Dhania) 1 tablespoon
Garam Masala Powder 1 teaspoon
Salt, to taste As required
Butter (Salted), or oil 1 tablespoon
Fresh cream 1 tablespoon (reserve 2 teaspoons for garnish)
Water, as required For curry consistency
Fresh Coriander (Dhania) leaves For garnish

Instructions

  1. Prepare the Koftas:

    • Begin by boiling 1 liter of water in a large pot. Add 1 teaspoon of salt to the water and turn off the heat.
    • Remove the stem and leafy parts of the cauliflower, and immerse the cauliflower florets into the hot water. Let it sit for 3-4 minutes. Then, remove the cauliflower and pat it dry with a kitchen towel.
    • Grate the cauliflower finely, and set it aside. Let it release moisture for about 10 minutes, then squeeze out the excess water and discard it.
    • Heat a pan and dry roast the grated cauliflower over low heat until it becomes completely dry. Be careful not to let it brown. Once roasted, remove it from the heat and let it cool to room temperature.
    • In a mixing bowl, combine the cooled cauliflower, grated paneer, mashed potatoes, corn flour, and all the spices. Mix thoroughly until everything is well incorporated.
    • Shape the mixture into small lemon-sized balls and arrange them on a plate. Set aside.
  2. Fry the Koftas:

    • Heat oil in a pan for deep frying. Once the oil is hot, gently add the koftas and fry them until golden brown and crispy on all sides. For a healthier version, you can bake the koftas in a preheated oven or cook them in a kuzhi-paniyaram pan for a lighter option.
    • After frying, place the koftas on kitchen paper to absorb any excess oil.
  3. Prepare the Curry:

    • In a pan, heat 1 tablespoon of butter (or oil). Add 1 teaspoon of ajwain (carom seeds) and sauté for a minute.
    • Add the finely chopped onions and sauté them until they turn translucent.
    • Stir in the tomato puree and cook until the mixture thickens and begins to separate from the sides of the pan.
    • Add the Kashmiri red chilli powder, coriander powder, garam masala powder, and salt. Stir well to combine the spices with the tomato-onion base.
    • Add water gradually to reach your desired curry consistency. Bring the curry to a boil, then reduce the heat to low.
    • Stir in 1 tablespoon of fresh cream, mixing it thoroughly into the curry.
    • Add the fried koftas to the curry and simmer for 3-4 minutes to allow the koftas to absorb the flavors of the curry.
  4. Final Touches:

    • Turn off the heat and garnish the curry with the reserved fresh cream and freshly chopped coriander leaves.

Serving Suggestions
