Instructions

To prepare the Cherry Plumcake, start by preparing the cherries: remove their stems, wash them thoroughly, dry them, and then pit them. Once the cherries are prepped, take a vanilla pod and split it open, scraping out the seeds. Add the vanilla seeds to the mix.

In a large mixing bowl, begin to beat together the butter and sugar using a hand mixer until the mixture becomes light and fluffy. Once combined, add the eggs one at a time, continuing to beat until the mixture is smooth and homogenous. Add a pinch of salt for extra flavor.

Next, in a separate bowl, combine the all-purpose flour, potato starch, and baking powder, then sift these dry ingredients into the wet mixture. Stir everything well until fully incorporated, making sure there are no lumps.

Now itโ€™s time to prepare your baking tin: grease a 1.5-liter plumcake (loaf) pan and line it with parchment paper. Pour half of the batter into the pan, then evenly distribute half of the pitted cherries on top. Cover them with the remaining batter, and finally, add the remaining cherries on top.

Place the pan in a preheated oven at 160ยฐC (320ยฐF) and bake for 70-80 minutes, or until a toothpick inserted into the center comes out clean. Once baked, allow the plumcake to cool completely before carefully removing it from the pan. Let it sit and cool before slicing to serve.
