Capcay Ayam Jamur Delight
Ingredients
Main Ingredients:
- 1 small carrot, thinly sliced
- 1 handful of button mushrooms, thinly sliced
- 1 piece of fried chicken breast, diced
- 1 tomato, sliced lengthwise
- 1 stalk of celery, finely sliced
- 1 small stalk of green onion, finely sliced
- 200 cc of chicken broth
Seasonings:
- 2 cloves of garlic, crushed and chopped
- 1 thumb-sized piece of ginger, crushed
- 1 bird’s eye chili, finely sliced
- 1/2 teaspoon of ground pepper
- 1/2 teaspoon of fish sauce
- 1/2 teaspoon of sweet soy sauce
- 1 teaspoon of granulated sugar
- A pinch of salt
- Seasoning to taste
Instructions

Sauté Aromatics:
- Heat a pan over medium heat and add a bit of oil. Sauté the garlic and bird’s eye chili until fragrant.
- Add the chicken broth and bring it to a boil.

Cook Vegetables:
- Once the broth is boiling, add the sliced carrots. Cook until they start to soften.
- Add the mushrooms and diced fried chicken to the pan, stirring to combine.

Season and Simmer:
- Season with salt, granulated sugar, ground pepper, ginger, fish sauce, sweet soy sauce, and seasoning to taste. Stir well to ensure all the flavors meld together.

Final Touches:
- Add the green onion, celery, and tomato. Stir briefly until everything is mixed and heated through.
- Remove from heat and serve immediately.

- Chicken Broth: For a richer flavor, you can use homemade chicken broth.
- Vegetables: Feel free to add other vegetables like bell peppers or baby corn to make the dish more colorful and nutritious.
