Capcay Ayam Jamur Delight

Ingredients

Main Ingredients:

  • 1 small carrot, thinly sliced
  • 1 handful of button mushrooms, thinly sliced
  • 1 piece of fried chicken breast, diced
  • 1 tomato, sliced lengthwise
  • 1 stalk of celery, finely sliced
  • 1 small stalk of green onion, finely sliced
  • 200 cc of chicken broth

Seasonings:

  • 2 cloves of garlic, crushed and chopped
  • 1 thumb-sized piece of ginger, crushed
  • 1 bird’s eye chili, finely sliced
  • 1/2 teaspoon of ground pepper
  • 1/2 teaspoon of fish sauce
  • 1/2 teaspoon of sweet soy sauce
  • 1 teaspoon of granulated sugar
  • A pinch of salt
  • Seasoning to taste

Instructions

  1. Sauté Aromatics:

    • Heat a pan over medium heat and add a bit of oil. Sauté the garlic and bird’s eye chili until fragrant.
    • Add the chicken broth and bring it to a boil.
  2. Cook Vegetables:

    • Once the broth is boiling, add the sliced carrots. Cook until they start to soften.
    • Add the mushrooms and diced fried chicken to the pan, stirring to combine.
  3. Season and Simmer:

    • Season with salt, granulated sugar, ground pepper, ginger, fish sauce, sweet soy sauce, and seasoning to taste. Stir well to ensure all the flavors meld together.
  4. Final Touches:

    • Add the green onion, celery, and tomato. Stir briefly until everything is mixed and heated through.
    • Remove from heat and serve immediately.

Notes

  • Chicken Broth: For a richer flavor, you can use homemade chicken broth.
  • Vegetables: Feel free to add other vegetables like bell peppers or baby corn to make the dish more colorful and nutritious.
  • Spice Level: Adjust the amount of bird’s eye chili according to your preferred spice level.
