Instructions

  1. Prepare the Batter
To begin preparing your fig cake, start with the batter. Place the butter, softened to room temperature, into the stand mixer bowl, and cut it into small pieces. Add the sugar and mix on medium-low speed until the mixture becomes light and fluffy. This process should take about 4-5 minutes. It is crucial to properly cream the butter and sugar for a smooth texture in the cake.

  2. Incorporate the Eggs
In a separate bowl, whisk the eggs lightly using a fork. Gradually add them to the butter-sugar mixture while continuing to mix on low speed. This will allow the eggs to blend in smoothly. Once all the eggs have been added, increase the speed slightly and mix until fully incorporated.

  3. Add Flavor and Dry Ingredients
Add a pinch of salt and the freshly grated lemon zest to the mixture. Continue mixing until everything is evenly combined. In a separate bowl, sift together the all-purpose flour and almond flour to ensure there are no lumps. Gradually add these sifted dry ingredients to the wet mixture, mixing until just combined.

  4. Add Milk
With the mixer still running, slowly pour in the milk at room temperature. Allow the batter to fully absorb the milk. The texture should be thick but smooth, and it should hold its shape well in the pan.

  5. Prepare the Cake Pan
Grease a 22 cm (9-inch) round springform cake pan with butter, and dust it lightly with flour. This ensures that the cake will come out easily once baked. Once the pan is prepared, transfer the batter into it, using a spatula to evenly spread and level the surface.

  6. Prepare the Figs
Now, turn your attention to the figs. Wash and peel them, removing the hard stems. Slice the figs into thin, even slices. These slices should not be too thick, as they will need to bake evenly and blend into the batter. The natural sweetness of the figs will complement the lightness of the cake.

  7. Arrange the Figs
Begin arranging the fig slices in a circular pattern, starting from the outer edge of the cake pan. Gradually work your way towards the center. Place the fig slices neatly in concentric circles, ensuring the entire surface is covered. The fig slices should slightly overlap to create a visually appealing and flavorful topping.

  8. Add Almonds and Brown Sugar
Once the figs are arranged, sprinkle sliced almonds evenly over the top of the cake. The almonds will toast during baking, adding a delightful crunch. You can also sprinkle a small amount of brown sugar over the almonds for extra sweetness and a beautiful caramelized effect once baked.

  9. Bake the Cake
Preheat your oven to 180°C (350°F). Place the cake in the oven and bake for about 40-45 minutes, or until the cake is golden brown and a toothpick inserted into the center comes out clean. The aroma of the figs and almonds will fill your kitchen, signaling that the cake is nearly ready.

  10. Cool and Serve
Once baked, remove the cake from the oven and allow it to cool in the pan for about 10-15 minutes. This step is crucial to allow the cake to firm up. After cooling, gently remove the sides of the springform pan and place the cake on a wire rack to cool completely.

After the cake has cooled, it is ready to be served. You can cut it into slices and enjoy it as a delightful dessert. The sweetness of the figs, the nutty crunch of the almonds, and the softness of the cake create a perfect combination that will please any palate.

Enjoy your homemade fig cake as a dessert for family gatherings, afternoon tea, or any occasion where you want to share something special.
