Prepare the dough base:
Begin by preparing the dough for the sweet fruit pizza. Split the amount of warm milk into two separate bowls. In one, add the honey and stir gently until dissolved. In the second bowl, dissolve the coarse salt in the other half of the milk. -
Combine the ingredients:
In a large mixing bowl, sift the Manitoba flour and add the grated orange zest. Gradually pour in the two milk mixtures — first the one with honey and yeast, and then the one with salt. Stir briefly with a fork to combine, and then add the olive oil. Mix until the dough begins to come together. -
Knead the dough:
Once the liquids are absorbed, transfer the dough onto a floured work surface or pastry board. Knead the dough with your hands, working it until it becomes smooth and elastic. Place it back into the bowl, cover with plastic wrap, and let it rise at room temperature for at least 3 hours. The dough should double in size during this time. -
Shape the pizza base:
After the dough has risen, transfer it to a lightly floured surface. Roll it out with a rolling pin to your desired thickness. Ensure that the base fits perfectly into your pizza pan, and gently press the edges against the sides of the pan. Prepare the fruit topping:

Preheat the oven to 180°C (350°F). Brush the pizza dough base with 100g of red currant jam, spreading it evenly to cover the surface. Arrange the diced peaches, halved strawberries, and fruit slices onto the jam-covered base. Scatter the blueberries and whole cherries over the top. -
Finish the pizza:
To add a glossy finish, dilute the remaining jam with 50g of water at room temperature and brush it over the fruit. This will preserve the fruit and give it a beautiful shine. Finally, garnish the pizza with fresh mint leaves for a burst of color and freshness. -
