Step Instructions
Prepare 2 thick large sheets of clean thick polythene for rolling. Ensure they are clean and dry.
Deseed the cardamoms and crush the seeds coarsely. Set aside for later use.
Grease one side of the polythene sheets and set them aside. This will prevent the halwa mixture from sticking.
In a large heavy pan, mix together the semolina, ghee, milk, and sugar.
Place the pan on high flame and stir continuously until the mixture comes to a boil.
Reduce the flame and continue stirring until a very soft lump is formed. This may take some time, so be patient.
Add the rose water to the mixture and top it with 2 tablespoons of ghee.
Remove the pan from the flame and knead the mixture well with a spatula. This step is crucial for the texture of the halwa.
Place the lump between the greased sides of the polythene sheets.
Roll the mixture evenly and as fast as possible. This will help in achieving a uniform thickness.
Remove the top sheet of polythene and sprinkle the toppings evenly over the rolled halwa. This includes slivered pistachios, saffron strands, and crushed cardamom seeds.
Replace the sheet and reroll the halwa quickly until it is very thin.
Cut the halwa into 4″ squares and allow it to cool completely.
Store the halwa in an airtight container, placing pieces of butter paper between layers to prevent sticking.
Note: Ensure that the tempering (kneading) of the halwa is done well, as this brings shine to the final product.

Enjoy your homemade Ice Halwa! 🍨✨
