1 | Prepare 2 thick large sheets of clean thick polythene for rolling. Ensure they are clean and dry. |
2 | Deseed the cardamoms and crush the seeds coarsely. Set aside for later use. |
3 | Grease one side of the polythene sheets and set them aside. This will prevent the halwa mixture from sticking. |
4 | In a large heavy pan, mix together the semolina, ghee, milk, and sugar. |
5 | Place the pan on high flame and stir continuously until the mixture comes to a boil. |
6 | Reduce the flame and continue stirring until a very soft lump is formed. This may take some time, so be patient. |
7 | Add the rose water to the mixture and top it with 2 tablespoons of ghee. |
8 | Remove the pan from the flame and knead the mixture well with a spatula. This step is crucial for the texture of the halwa. |
9 | Place the lump between the greased sides of the polythene sheets. |
